May #bloggerbliss

May has been an incredibly busy, but wonderful month!  I haven’t had a chance to blog much lately and I have some changes being made as I type, but I’m excited to be here for Bliss!  I love sharing my favorite things from the month and I hope you do too!  Link-up below with me and Meg!

I spent a lot of time with these two pups this month!  I stayed with Nick’s sister-in-law since for a week this month.  These two LOVE some attention.  They were helping me apply for a part time job at our local Y.  I haven’t purchased a membership to a gym yet because I’d love to just work part-time at one and get a free membership – that’s not looking too good though.  Oh well.

Also, Nick’s sister-in-law had her parents in town during the month.  They knew I was staying with her for a few days and so while they were all at lunch together, they sent her home with a cookie for me!  Truly the way to my heart forever!
It was so delicious!  I tried to eat just half of it at work, but that baby was gone before I knew it!
Nick and I went to Florida as a “graduation present” of sorts for him, so we of course went to Disney World!!  Per usual, we had a blast!  We really wanted to try one of these gigantic cinnamon rolls at Gaston’s Tavern and it did NOT disappoint.  Luckily, we’re extremely active at Disney, so we burned those calories right off… maybe?
Speaking of Nick’s graduation, that did in fact happen and I’m so proud of him!! He’ll be continuing on to Grad School now, yay!!!
During the month of May, I also raised $306 for Diabetes and completed my 25 mile bike ride!! Everything about that day was perfect!  The ride was perfect, the weather was perfect, everything was perfect!  I’m so glad Nick snapped this great picture of my coming in from the race!
I was in Starkville this past weekend and we did some grocery shopping for Nick before I left.  He was trying to come up with good breakfast options that require minimal dishes.  I remembered this microwave egg cooker that I thought he’d enjoy and we found it at Walmart.  He sent me a picture yesterday saying that it worked out really well and he enjoyed his egg sandwich this yesterday morning!

This month has been really great and I had a lot of favorite moments (not as many favorite things).  I’m so thankful for the people in my life and joy they bring me!

What I ate – St. Louis

Typically, vegetarians get the shaft when it comes to pre-prepared food.  Unless you are able to state your vegetarian ways, you can usually suspect that your vegetarian pickin’s will be slim.  Fortunately for me, that was NOT the case on my trip last week to St. Louis.  I had ample food selection.

Monday night, I joined some ladies for dinner & drinks.  We ate at the hotel restaurant and I chose two appetizers because I didn’t really see much in the way of a good vegetarian entree. I probably could have survived with just the veggie plate though because this turned out to be a TON of food!

Those are beautiful grilled veggies with feta and pita and hummus with pita.  It was all so delicious!  I made little veggie sandwiches out of the pita bread.
Tuesday and Wednesday breakfast was simple and easy – mostly fruit, some eggs, a danish here or there, and cereal.  I didn’t snap any pictures of that though.
Tuesday lunch was probably my favorite meal provided by the hotel.  I originally loaded up my plate with half salad because I was afraid I wouldn’t have too many other options.  I was completely wrong and ended up overloading my plate because I wanted so much more than just a salad!
There are grilled veggies & pita again, polenta, grilled asparagus, tomato & goat cheese, and my half plate of salad.  This was delicious!
Monday night we went and enjoyed Lucas Grille.  We each got 2 drink tickets and unfortunately, I didn’t snap any pics of my drinks!  I did snap a great picture of this mushroom risotto though.
It was totally filling and I really enjoyed the little crunched onions over top.  I also enjoyed a salad and cheesecake this evening.
Lucas Grille did not disappoint and I would love to go back if I’m ever in St. Louis again.
Wednesday’s lunch before leaving town wasn’t super spectacular, so I don’t have a picture of it, but overall my food experience in St. Louis was phenomenal and I’m so thankful that my vegetarian stomach didn’t starve.  I also felt like I could eat relatively healthy the entire time, so I greatly appreciated that aspect as well.
Any other places I should try next time I’m in St. Louis?

St. Louis Trip

I have a quick 10 minutes to put this blog post together.  I’ve been wanting to share about my trip to St. Louis last week.  It’ll be short and sweet because it was 99.9% business!  I was in a hotel learning millions of amazing things to take back to work.

I have no time to watermark my pictures, so also… don’t steal them!  Thanks!

I left first thing Monday morning and leave it to me – I left all of my professional hanging clothes up in my closet…. so I had a minor panic attack once we hit I-55, but the situation was salvaged thanks to my calm co-worker who didn’t mind turning around and my awesome dad who met us half-way with my clothes (and my straightener, because I forgot that too).

We arrived in St. Louis around 5pm and I went and did a real quick run, then met some girls for dinner.  They were super sweet and I’m so glad I have them as a connection now.

Tuesday was packed with sessions and I got lots of great material.  Before dinner, I rushed out of the hotel to find the arch.  I couldn’t take a ride up, but I did manage to get a few pictures.  The sun was in the perfect spot to blind me during said pictures, so none of these pictures are fabulous of me, but the arch looked beautiful in all it’s glory!  Tuesday night was an amazing dinner at Lucas Grille.  They didn’t have a vegetarian option on our special menu, but I asked and they managed to throw together a delicious mushroom risotto (It amazes me how OKAY I am with eating mushrooms now!)  We also had 2 free drink tickets, so I had a white wine spritzer and a margarita.  Both were heavenly concoctions.

Wednesday was packed with more sessions and then we headed out of there around 2pm.

Enjoy the pictures.  Later in the week, I’ll share about the food from the trip.  Believe me, for a vegetarian, it’s completely worth saving for a post on it’s own!

I really enjoyed St. Louis!  It was beautiful (minus all the ridiculous construction down town).  The food was great, the company at the conference was amazing, and overall I had a wonderful first work trip with my company.
