Mix-matched Oatmeal

 

Hey There!

For some reason, I was super tired this morning!  I didn’t wake up for a run like I wanted to.  On my way to work this morning I enjoyed a cup of coffee.  I usually have a safer option, with a to-go lid and all, but I didn’t want much this morning (I’m trying to cut back! *gasp*) so I figured the half cup would do.

I realized at about 10am, that I may  not be able to eat much later in the day.  I went to the dentist about a month ago now that I have all my health, dental, & vision insurance with this new job.  I knew I had some things to take care of immediately.  The first were 4 areas that needed fillings.  We scheduled the first 2 for today.  I was worried how my mouth would feel afterwards.  I enjoyed a Kashi Go Lean Hot Cereal right before I left the office.  When I’m at work, this is how I eat any type of oatmeal or cereal.

Classy, I know!  I typically like my oatmeal to be more watery than most people.  I promise, I found it to be delicious!  I had my dentist appt. at 11am, but found myself extremely hungry afterwards (go figure!) and I thought sipping food through a straw is probably my best bet.  I opted for Smoothie King!  Not gonna lie, sipping through a straw was a little more challenging than I expected with a numb mouth!  I kept hitting my teeth with the straw when I would put it in my mouth.

Tonight’s DINNER was actually oatmeal…. I’m in somewhat of a food rut – I’m pretty much just eating what I have on hand (which isn’t much of anything!).  I tried to spruce it up a bit though and it turned out pretty good!

Ingredients:

  • Oatmeal
  • Milk
  • Walnuts
  • Flax Seed
  • Peanut Butter
  • A drizzle of Agave Nectar

I guess you could call this mix-matched oatmeal because I just threw what I had on hand in there.  Some other great options would be other types of nuts, dried fruit, other additives like wheat germ, greek yogurt, chocolate chips, and gosh… that list could go on and on!

Once my food settled, I chose to do a bike ride for my WORKOUT today.  I haven’t ridden my bike since the Tour De Cure race I did on May 10th!  It was nice to get back on the trail and enjoy the wind in my face.  I was a little sore, so I didn’t push myself really hard, I just enjoyed the ride.

I’m so glad we have these nifty water fountains in the area!!  They’re freeze proof too!  I forgot to load up some water in my bike before I left the house so I stopped at each one that I passed to stay hydrated!  I also love this time of day when the sun sets!

May #bloggerbliss

May has been an incredibly busy, but wonderful month!  I haven’t had a chance to blog much lately and I have some changes being made as I type, but I’m excited to be here for Bliss!  I love sharing my favorite things from the month and I hope you do too!  Link-up below with me and Meg!

I spent a lot of time with these two pups this month!  I stayed with Nick’s sister-in-law since for a week this month.  These two LOVE some attention.  They were helping me apply for a part time job at our local Y.  I haven’t purchased a membership to a gym yet because I’d love to just work part-time at one and get a free membership – that’s not looking too good though.  Oh well.

Also, Nick’s sister-in-law had her parents in town during the month.  They knew I was staying with her for a few days and so while they were all at lunch together, they sent her home with a cookie for me!  Truly the way to my heart forever!
It was so delicious!  I tried to eat just half of it at work, but that baby was gone before I knew it!
Nick and I went to Florida as a “graduation present” of sorts for him, so we of course went to Disney World!!  Per usual, we had a blast!  We really wanted to try one of these gigantic cinnamon rolls at Gaston’s Tavern and it did NOT disappoint.  Luckily, we’re extremely active at Disney, so we burned those calories right off… maybe?
Speaking of Nick’s graduation, that did in fact happen and I’m so proud of him!! He’ll be continuing on to Grad School now, yay!!!
During the month of May, I also raised $306 for Diabetes and completed my 25 mile bike ride!! Everything about that day was perfect!  The ride was perfect, the weather was perfect, everything was perfect!  I’m so glad Nick snapped this great picture of my coming in from the race!
I was in Starkville this past weekend and we did some grocery shopping for Nick before I left.  He was trying to come up with good breakfast options that require minimal dishes.  I remembered this microwave egg cooker that I thought he’d enjoy and we found it at Walmart.  He sent me a picture yesterday saying that it worked out really well and he enjoyed his egg sandwich this yesterday morning!

This month has been really great and I had a lot of favorite moments (not as many favorite things).  I’m so thankful for the people in my life and joy they bring me!

With just a bit of pixie-dust, maybe I won’t give up!

A lot of things made tonight a really great night.  First of all, when I got off work I went home and got a good run in.  Nick and I are of course doing a challenge because we both need to get our rears in shape!  We’re doing 100 miles in 100 days, but it only counts when you reach your pace goal.  My personal pace goal is a 10:15 mile.  Nick’s is something absurd like 8 minutes and something seconds.  So far I’m at 3 miles complete.  So I did 2 miles today and it felt good.  After my run, I came home to a birthday card in the mail from my best friend who now lives in Colorado and a sweet birthday care package from my blog bestie, Meg, that was filled with tons of fun things to enjoy this week (more on that later)!  I also went grocery shopping tonight, which always makes me happy!  I got some great stuff for lunches this week and enjoyed one of my egg & cheese bagels for dinner.  Right now, I’m blogging and watching Tangled.  You see?  Great night!

Now, I’m having a difficult time with something at the moment…. you remember that bike ride I’m doing to raise money for diabetes?  Yeah, me neither pretty much!  Just kidding, I do remember it… because y’all, I’m sort of freaking out!  I’ve only raised $37 out of the $200 I MUST have in order to even ride!  On top of that, I haven’t trained at all.  It’s a month away.  Now, let’s be honest…. I told them that there was no way on this green earth that I will survive a 50 mile bike ride in a month, so now I’m signed up for the 25 mile bike ride.  I think I’ll be able to manage.  The truth is though, I’m not very motivated to do it at all.  I’m pretty sure that Nick and I are going to Florida immediately after the race (his brother is moving there, yay!  More Disney for us!) and I just don’t want to trek my bike back and forth or have to get a place to stay in NOLA (because our free place fell through).

So today’s INSPIRING topic is about “pushing through” because clearly, I need this talk myself!  When I did the Disney College Program, I was tempted to quit more times that I can count on my hand.  I didn’t though… I pushed through.  Granted, I pushed through because of the amazing people in my life who convinced me to stick it out and seriously, I’m so grateful for that encouragement!  I specifically remember sitting at dinner one night, at my favorite pizza place in Orlando, Flippers, and talking with Nick, his brother, and sister-in-law when they were in town for Spring Break.  At this point, I was dead set on leaving.  I don’t exactly remember the precise words his brother used, but they were so compelling that I knew I’d end up staying (even though I didn’t want to).  I have no doubt it was something along the lines of regret because that is truly what it boiled down too – I was certain I’d regret leaving.  Now, that wasn’t the last time I thought about leaving… it came up a few other times, but in the end… I’m so thankful for the conversation and the power it had to keep me at Disney.

*I may use my Disney College Program experience a little too much these days lol, oh well*

The question is…. Will I regret not doing this race?  Chances are, I will.  The cause is close to my heart – my best friend growing up dealt with and continues to deal with Diabetes.  The money is going towards the education and resources for diabetes education.  I’ll get a good 25 mile workout from it right before sporting my swim suit in Florida.  Basically, I need to stick it out.  I need to push through.  I will feel better about myself and the cause if I do it.

Do you struggle with this?  Do have a situation where you gave up on something and ended up regretting it?  Do you have a situation where you didn’t give up on something and you’re thankful that you did?  What about….. a situation where you gave up and you DIDN’T regret it?
