4th of July in Gainesville

I just arrived back in town this morning and I’m 100% exhausted, but this weekend was one for the freakin’ books of awesome!  Every second was absolutely wonderful.  Nick and I enjoyed spending lots of quality time with his brother & sister-in-law as well as meeting some of their new friends in Gainseville! 

Trey’s friend, Casey, invited us to a 4th of July party that turned out to be a blast.  It was our first time meeting these friends of theirs and they were such a treat!  We laughed the entire time, I felt completely comfortable around them and I look forward to hanging out whenever we go back to visit!

Kathryn and I learned 2 lessons on Friday

(1) Watermelon & Tortilla Chips are NOT delicious and they do NOT taste like a really great cereal.

(2) Big K.R.I.T is a famous rapper from Mississippi that clearly we should know… but do not.

A fairly intoxicated man told us that watermelon and tortilla chips were awesome together.  We all gave it a try and although some people seemed to enjoy it okay – Kathryn and I were not so impressed.

Our suggestion is to enjoy your watermelon as watermelon and your tortilla chip with some salsa.  Do not mix.  The same guy (or it could have been a completely different guy!) learned that we were from Mississippi and asked us if we knew who Big K.R.I.T was – we did not.  Apparently he’s a famous rapper from Mississippi and we should be ashamed to not know who that is.  Clearly he doesn’t realize the extent of rap music that Kathryn and I listen to on a daily basis… which is none.

We spent the afternoon hanging around and playing some games.  There was a mini-zipline and a ball bounce that the guys enjoyed!

I didn’t venture out on it, but those who did seemed to have a lot of fun!  We did however venture out on the golf cart.  These people had a ton of land to explore!  We were treated to the most outrageous story during our golf cart ride about people getting stranded in the woods and having to do gross things to survive.  Then I learned all about Outward Bound which is an outdoor education program that Sarah, one of the girls we met, had done a few years back.  This girl was hilarious!  Unfortunately, our golf cart ran out of battery and we had to get towed back to the house.  While we waited for help, she showed us her survival skills by trying to climb a tree with flip-flops.

The rest of the evening was spent chit-chatting and taking pictures.  It was a fun & relaxing 4th of July weekend!

There was one point in the day that was NOT so relaxing… we were walking out to see the guys do the zip-line and the bouncy ball, I was just chatting away with Laura when Kathryn & Sarah screamed because I almost walked right into a massive spider web with some of the scariest spiders I’d ever seen.  Seriously, I think Florida takes the trophy for World’s Creepiest Spiders & Webs because I saw my fair share of those things!

I’m looking forward to my Disney re-cap this week because Nick and I could not have experienced a more perfectly planned day at Disney on Saturday!

Deer in the front yard

We finally made our way to Gainesville around 3am (FL time) this morning.  We weren’t able to leave Starkville until about 5pm, so we grabbed our Starbucks before heading out.

Woke up this morning and grabbed some BREAKFAST – it turned out perfect!  An open-faced egg & cheese sandwich.  It fueled me for our run this morning!

We had the most exciting encounter on our run this morning!

DEER!!!!!

They were standing right in the front yard of a house for sale and they didn’t run off or anything!  We saw 2 adults and kept walking then saw 3 little babies!  I couldn’t believe how calm they were and how close they were!  It was the coolest thing!

Once we passed by the first time, I wanted to get a picture with them on our way back, but they had started moving.  You can barely see them and at this point they were eyeing me down because they were back with their babies.  If you look closely between those 2 trees below, you’ll see them standing there.

I was overwhelmed with excitement.  They were so beautiful!

My dad’s been sending me the cutest pictures of cappie too, so here’s something to brighten up your hopefully amazing 4th of July!

He made himself right at home at my Nanny’s house this weekend!

Cards Against Humanity

 

The Monday work day is officially behind us!

For LUNCH today, I tried Amy’s Broccoli & Cheddar Bowl.  It was pretty great!  There was more broccoli than I could actually finish, but I got most of it down.  The cheddar and pasta were right on though!   When it got close to quitting time, I also ate a CLIF bar because I knew I’d be working out after work and needed the extra fuel.

I headed to the gym immediately after work, My WORKOUT consisted of some treadmill walking and then an ab class and tone & scupt class.  I’m definitely feeling it in my arms today!  I felt like I pushed myself pretty well.  Nick and I are working on some challenges right now – mine is to workout for 21 days straight!   You know the saying, 21 days makes a habit?  Exactly my goal.  In fact, I made this “Back in the Habit” workout schedule for my friend Lacy this weekend because she needed something similar.  I’m not currently doing this plan, but I wanted to share it with y’all in case you need a schedule to make working out a habit again!  Just remember to walk if you need to walk!  I know it jumps to 4 miles pretty quick, but that entire 4 miles can be walked if you want – just get moving!

I incorporated some yoga on the last day so you can stretch it out real good!

I got home from the gym and immediately worked on dinner.  I made some Morning Star Riblets that turned out delicious with a croissant and a side of apples w/ peanut butter!  It may be an odd combination, but it seriously did the trick for me!

I’ve heard people ask why you would eat “fake” meat.  If you want to eat something that mimics the real deal, why not just eat the real thing?  It makes perfect sense to me though!  So let me explain just in case you’re wondering the same thing… Before I was a vegetarian, I would have loved some ribs.  The texture and the sauce are a delicious combination.  I love the fact that I’m able to enjoy some of my favorite foods without having to create more harm to animals.  I don’t judge you for eating the real thing though – it’s all about personal choice.

Saturday night, Nick and I had a couples night with our friends Jamey & Ben.  They grilled out for us and made Sangria!  We also played a game that I’ve been hearing about over  & over on blogs, but never had the opportunity to play until now…..

In case you’re not familiar, it’s like Apples to Apples, but for adults.  It’s a little more R-rated…. but so fun!  I definitely had a blast for my first time playing.

Jamey also surprised me with my all-time favorite dessert!  One day I’ll get the recipe from her and share it with y’all, but she uses Blackberry for me because we both love it!

It was a great weekend – drinks, friends, card games, and delicious food!
