Health Starts Here: Week 2 Recap!

Hey there friends!

I just got back from my week 3 Health Starts Here Meet-up and man it was good!  I can’t wait to re-cap it!  I’m trying to study for my Series 6 and so I left work and went straight to Whole Foods for some study time & dinner.  I chose the sushi tonight and it was really good.  I’m not the type of person who craves sushi all the time, so this sushi should curve my craving for about a month and then I’ll want sushi again.  It was an easy dinner for studying and because of the brown rice & quinoa, it fit perfectly with my Health Starts Here Challenge!

WEEK 2 RECAP

Unfortunately, I missed the meeting last week because I had to buy my new car, but our wonderful Healthy Eating Specialist, Mary Lindsey, sends out a great re-cap each week, so I can share some of the pointers with you from the meet-up.  Before I go into that information, I want to share my thoughts on the challenge up to this point.

1. I’m noticing a difference in my focus!  I feel like my mind is clearer and I’m not as forgetful.  Before I started the challenge, I was feeling foggy and distracted all the time.  I was making mistakes at work and I was extremely forgetful.  I’m cleaning up some of those mistakes now and continuing to find new ones I had previously made, but I’m so thankful for the clear head to get things back in order at work.  In my personal opinion {I’m not doctor}, but I think it has a lot to do with the dairy for me.  When I attempted a vegan diet, I’m fairly certain I had this same reaction and I’m basically going vegan again with this particular diet.  I don’t know if I’ll cut out dairy completely after this, but I’m cutting back drastically because I most certainly see the improvement in my mental health!

2. Others are noticing!  Isn’t that what we all want?  For others to notice the difference we’re making.  I’ve had 2 different people over the past week ask me what I’m doing because I look “good” or I look “healthy” or I look “skinnier”.  I’m so excited to tell them that I’ve been doing the Health Starts Here Challenge with Whole Foods and although I haven’t kept up with a number on a scale, I’m noticing a difference too and I GREATLY appreciate them telling me!  I will never be offended by someone who points out that I’m looking good at any particular moment!  It could be just a good day or it could be an entire lifestyle change, I’ll always appreciate someone sharing that with me.  I’ve talked to some other people throughout the week regarding my improvements as well and it’s extremely motivating to stay on task!

3. Weekends are rough.  I have cheated both weekends since the challenge.  It’s not the end of the road for me though, I just pick myself back up and start back fresh.  I’ve done an excellent job on the week days, but I’m disappointed that I went overboard this past weekend.  When Nick comes to town, we don’t cook very often because I’m living at my parents and he’s staying at his when he comes.  We also had his brother & sister-in-law in town, so there were lots of family & friend dinners out!  I’m determined to have at least ONE weekend where I stick to the challenge.

Nick and I did manage to make some guacamole & juices on Sunday night before he headed back to Starkville and I truly cherish those times together in the kitchen!  One of my favorite things when we lived in the same town was cooking together and although we don’t go to the same extent that we use to, I enjoyed this time so much!  It was one of the highlights of my weekend.

BULK BASICS

The topic last week was Bulk Basics.  I’m so sad I missed it, but here is what I gathered from Mary Lindsey’s notes.

She makes a good point initially that grains have gotten a bad reputation lately.  Everyone got interested in those no-carb diet fads and lost a lot of weight from it, but the truth is… they gained it all back when it was over.  Also, they were discounting some of the better grains out there – Whole Grains.  Our challenge focuses heavily on eating Whole grains so you can have some of your favorites like bread and spaghetti.  The problem comes when you REFINE the grain.  She explained that there are 3 separate parts to a grain and when you refine a grain, it breaks down 2 of those parts and sure enough, that’s the part of the grain that holds the nutrients & fiber.  So when you eat refined grain, you’re not receiving the nutrients you need from that grain, you’re just eating the starch.

I cannot praise the use of beans enough!  As a vegetarian, I use beans to create a lot of substance in my food.  I love beans in chili and I’ll add beans to my vegetarian tacos!  They’re full of fiber & nutrients, but low in calories, cholesterol, & fat.  A lot of people neglect beans because of the “gassy” effect they have.  She gave some great pointers on digesting beans.

(1) Discard the soaking water.  Don’t cook your beans in the water you pre-soak them in.

(2) Cook your bean thoroughly

(3) Give your body time to adjust.  It’s so true!  The more beans you eat, yes, the more gas you’ll have initially, but eventually your body adjusts and you’ll notice that gas occurs less often and tends to be less smelly. {sorry for details here, but I think it’s important to know}

(4) Cook with bay leaf, cumin, or kombu – they cut down on the negative side effects.

Lastly, there are nuts & seeds.  I’m a huge nut butter fan, obviously I’m in love with peanut butter, but I’ve also enjoyed almond butter.  I add flax seed to all of my smoothies!  They have so many nutrients and you can’t taste it.  I haven’t tried chia seeds yet, but I hear so many great things about it.  It’s on the pricey side from what I understand, so I’ll probably hold off on trying those, but they go great in oatmeal & smoothies from what I hear.  You do want to watch your portions on this though – I struggle with portion control on my peanut butter daily.  A small handful of nuts can run you around 200 calories!  They’re great for additives & toppers, but you wouldn’t want them to be the star of the show in your culinary creation.

Those were the most useful tips I found through the Week 2 re-cap and again, I’m loving this experience and I’m learning so much!  I’m definitely noticing improvements in my body & my mental health!  I want to personally thank the staff at Whole Foods in Jackson, MS for their hard work and dedication to this program!  I’m unbelievably excited to have a resource like this in Mississippi and I truly hope Mississippi changes for the better!  That can start right here in Jackson with Whole Foods, this challenge, and their mission!  I want to thank Mary Lindsey for all the prep-work she does for us each and every week.  She’s been so responsive to e-mail and I never wait more than 24 hours to hear back!  She’s constantly sending me recipe suggestions based on feedback I’ve given her or requests for some “sweet” options!  I’m excited to see what another 2 weeks of this challenge can do for me!  Again, I encourage everyone to find the Whole Foods closest to them to see when the next challenge is at your store.

Health Starts Here – Week 1 Recap

Good Morning!

I hope y’all had a great weekend, mine was pretty eventful.

WEEKEND RE-CAP

Nick got into town Friday night and we went and had dinner with some friends of ours.  On Saturday, we were both up early getting my car to his dad’s shop for some work.  They were going to try and fix some of the problems I found out about, but unfortunately, it’s time for a new car.

I continued to cry a little on Saturday.  This has been such a wonderful car and when I get a new car, you can expect a good-bye post!  I’m so thankful for his loyalty throughout the past 7 years!  This has been the first major problem I’ve ever had with it.  So after they tried a few things, Nick and I started looking at cars.  I know I want a car with excellent gas mileage because I drive A LOT!  We stopped by the Toyota, Honda, Volkswagen, and Chevy dealerships in our area.  I didn’t leave with a car, but I left with an idea of what I want.  I’ve spent the weekend thinking it through and working out my budget.  I’ll be talking to them again today and we’ll see what happens with that.  Once we were done & I was personally exhausted from car shopping, we got ready for dinner with some of my friends from High School.  Yes, I still get together with a large group of my highschool friends when everyone is in town.  There were a lot of new people since I haven’t been able to see everyone in a long time.   A lot of girlfriends/boyfriends & wives/husbands.  It was fun though and I loved seeing my best friend, Patty, and her husband while they were in town for a short while.  We left early so I could go to Whole Foods for dinner.  They have this awesome special called 4 for 4, but I tend to say “Where’s my 4×4?” when I talk about it.  You pick 4 of the “Health Starts Here” Approved options for only $4!

The mango & black-eyed pea option you see were pretty spicy with jalepeno’s, but I loved that added flavor!  I also got garlicky kale & a white bean and spinach salad.  I love these because I don’t have to eat them all, I’m eating the leftovers today for lunch!  After we finished at Whole Foods, we went to Patty’s in-law’s to spend more time with them!  We were there til after midnight which is way past my usual bed time, but that quality time was well worth it with these two.

Sunday, Nick helped me work out some more options on getting a new car and I wrote out a new budget.  Then we took the boat out.  I didn’t snag any good pictures.  The water was perfect though and the weather was nice!  We enjoyed our time out there, but boating exhausts my body!  Also, I never smell as bad as I do when I get done boating.  It’s disgusting!  We rounded out our weekend by having dinner with Nick’s family. 

HEALTH STARTS HERE – WEEK 1 “PLANT THE SEEDS OF SUCCESS!”

It has officially been one week since I started the Health Starts Here Challenge! Last week at our first meeting, we discussed planting the seeds of success and I got some great ideas on recipes & quick meals.  The points were (1) Planning is Key (2) Stocking (3) Cooking (4) Avoiding Waste.  I always take away some great points from these weekly meetings.  For planning, we talked about finding common ingredients throughout the week so you can re-use a lot of your groceries.  This is really difficult for me.  Create a meal plan to stick by.  Stock your pantry with some basics: Beans, Rice, Vegetable Stock, Grains, & especially spices!  With this diet, food can turn out bland if you don’t diligently incorporate spices and flavor!  Whole Foods provides great cooking demos on their website and we watched a few of those for part 3, Cooking.  Lastly, we discussed avoiding waste.  You can do this by planning so you incorporate all of your groceries throughout the week, but I also learned that you should not put banana, avocado, or apple next to other foods.  They let off gases that spoil the food it’s around.  This was a huge take-away point for me!

I love how Mary Lindsey, our healthy eating specialist, has something for us to try each week.  We had a lot of questions at Orientation about dairy products, so she let us sample non-dairy milk.  My favorite was the Unsweetened Vanilla Almond Milk.

One other take-away from our session last Monday night was “Starting late is better than never starting!” which is obvious, but a reminder that is always nice to hear again & again.  It can also apply to a wide variety of areas in life.  Our next session is tonight at 6pm.  I might not be able to make it due to my car situation, but Mary Lindsey sends great re-cap e-mails so if I find something unique I’ll be sure to share it!

I’ll be completely honest, this challenge has proven to be difficult at times.  I did really great during the week at work & home, but when Nick got in town and my car died and we were out and about a lot, I had to make a few “cheats” throughout the weekend, but I tried to stay healthy during it.  I didn’t splurge on a hamburger & french fries or anything like that, but I did have a few exceptions – mostly with oil because if you go out somewhere, everyone cooks with oil.  I’m back on track today though and I’m determined to stay on track throughout the rest of the week!

Steam Frying

Good Morning!

CAR TROUBLE

Today I dropped my car off at the shop.  I might have had an emotional break down on my way home from the mall yesterday when my car started making weird noises (plus other issues) and I wasn’t able to get in touch with Nick so he could tell me whether or not I should be worried.  So I worried.  He said I should go ahead and take it in to the shop since he won’t be able to look at it until this weekend.  The love I have for my car is deep.  I really hope it can be fixed, but if it ends up costing too much, it’ll be time to replace it.  I’ll keep y’all posted because I know you’re really concerned!

DINNER

Despite my break-down in the middle of a parking lot, the rest of the night turned out pretty great!  I’m loving this Whole Foods Health Starts Here Diet (Read about my Orientation).  It’s taking some time to learn how to manage it, but I think it’s getting better.  I had mushrooms, onions, and a bell pepper that I needed to saute.  We’re not allowed oil in our diet, so I had to steam fry them without the oil.  It worked like a charm too!  I watched this video from Whole Foods to learn how to do that.

I used part of that for veggie tacos.  I also made some guacamole to go with it.  I’m not allowed chips which is really hard because guacamole and salsa are really great on this diet, but I have nothing to dip with!  I’m still working on that!  The tacos turned out great.

That’s guacamole, brown rice, low-sodium black beans, steam fried green bell peppers, mushrooms, & onions, and salsa.

I then put a portion of the steam fried veggies in a container for mexican later in the week and then steam fried the rest of the veggies with a little soy sauce to go in the brown rice I pre-cooked on Sunday.  I’m really looking forward to that for lunch today!  I already taste tested it last night before putting it away and yes, it’s delicious!

I have a major sweet tooth.  I really didn’t consider that when I signed up for the challenge, but quickly realized that I have almost zero options for something sweet.  I went to the Whole Foods website to find a dessert I could have on the Health Starts Here diet.  I found a Banana-Cocoa Snack Cake.  I followed the recipe exactly except I didn’t add the shredded coconut on top.  The texture turned out like cake in my opinion, which was great!  The taste is a little different, but you eventually get over it and enjoy the fake brownie that’s 100 times healthier for you!  My parents had strawberry shortcake for dessert, so I decided I would put strawberries on it and see how it tasted – well, it’s wonderful!

I’m enjoying the creativity that’s flowing with this challenge!  Constantly thinking one-step ahead to be prepared for the next meal.  I’m spending a lot more time in the kitchen, which is one of their goals for the challenge.  I’m excited about seeing the results after a week.  I believe I’m noticing a slight difference in my energy level, which is good.  I feel like my face is clearing up some, but it could be that time during the month when that usually happens (basically a 3 day window of clear skin before “that time of the month”).  Hopefully that’s not the case and I’ll continue to see improvement there.  I’ll do a full re-cap of my first week on Monday!

WORKOUT

One thing I’ve been slacking on are my workouts.  I ran 2 miles on Monday, I attended a portion of my HIIT class – it’s only 30 minutes- on Tuesday (I was running late because of work) and then I haven’t done anything today!  I need to get back to running and incorporating a lot of those circuit workouts I did during my 21 Day Workout Challenge.  Once I get news of my car, hopefully all is well and I can go pick it up after work then make it to that dreaded 5:45 class that I promised I’d go back to.

BREAKFAST

At our week 1 Health Starts Here class, our Healthy Eating Specialist, Mary Lindsey, shared what she eats for breakfast.  It sounded amazing, so I decided right then and there to buy what I needed and give it a try.  It’s also super simple!  You use Ezekial bread (I chose the cinnamon raisin), peanut butter (I’m using the Whole Food 365 brand because it has no added oil or sugar), sliced banana, honey, and a sprinkle of cinnamon.  It was so good!  I paired it with a cup of Dunkin Donuts coffee with Almond Milk.

 I’ve also been re-using my Whole Foods grocery bag for lunch.  It’s a lot nicer than the plastic bags I usually use and it stands up better.  I’m not worried about holes for my food or utinsels to fall through.

That’s the coconut milk I brought for work so I can have coffee.  I’m also loving the Whole Wheat Corn Muffins you see there.  You use honey and it sweetens them up – Delicious!

  • Will you try Steam Frying?

I had never heard of Ezekial bread, but really enjoy it now!  Even after the challenge, I will continue to Steam Fry when possible.  I don’t see any reason not too when my vegetables turned out delicious and I didn’t need added oil and fat to do that.
