Steam Frying

Good Morning!

CAR TROUBLE

Today I dropped my car off at the shop.  I might have had an emotional break down on my way home from the mall yesterday when my car started making weird noises (plus other issues) and I wasn’t able to get in touch with Nick so he could tell me whether or not I should be worried.  So I worried.  He said I should go ahead and take it in to the shop since he won’t be able to look at it until this weekend.  The love I have for my car is deep.  I really hope it can be fixed, but if it ends up costing too much, it’ll be time to replace it.  I’ll keep y’all posted because I know you’re really concerned!

DINNER

Despite my break-down in the middle of a parking lot, the rest of the night turned out pretty great!  I’m loving this Whole Foods Health Starts Here Diet (Read about my Orientation).  It’s taking some time to learn how to manage it, but I think it’s getting better.  I had mushrooms, onions, and a bell pepper that I needed to saute.  We’re not allowed oil in our diet, so I had to steam fry them without the oil.  It worked like a charm too!  I watched this video from Whole Foods to learn how to do that.

I used part of that for veggie tacos.  I also made some guacamole to go with it.  I’m not allowed chips which is really hard because guacamole and salsa are really great on this diet, but I have nothing to dip with!  I’m still working on that!  The tacos turned out great.

That’s guacamole, brown rice, low-sodium black beans, steam fried green bell peppers, mushrooms, & onions, and salsa.

I then put a portion of the steam fried veggies in a container for mexican later in the week and then steam fried the rest of the veggies with a little soy sauce to go in the brown rice I pre-cooked on Sunday.  I’m really looking forward to that for lunch today!  I already taste tested it last night before putting it away and yes, it’s delicious!

I have a major sweet tooth.  I really didn’t consider that when I signed up for the challenge, but quickly realized that I have almost zero options for something sweet.  I went to the Whole Foods website to find a dessert I could have on the Health Starts Here diet.  I found a Banana-Cocoa Snack Cake.  I followed the recipe exactly except I didn’t add the shredded coconut on top.  The texture turned out like cake in my opinion, which was great!  The taste is a little different, but you eventually get over it and enjoy the fake brownie that’s 100 times healthier for you!  My parents had strawberry shortcake for dessert, so I decided I would put strawberries on it and see how it tasted – well, it’s wonderful!

I’m enjoying the creativity that’s flowing with this challenge!  Constantly thinking one-step ahead to be prepared for the next meal.  I’m spending a lot more time in the kitchen, which is one of their goals for the challenge.  I’m excited about seeing the results after a week.  I believe I’m noticing a slight difference in my energy level, which is good.  I feel like my face is clearing up some, but it could be that time during the month when that usually happens (basically a 3 day window of clear skin before “that time of the month”).  Hopefully that’s not the case and I’ll continue to see improvement there.  I’ll do a full re-cap of my first week on Monday!

WORKOUT

One thing I’ve been slacking on are my workouts.  I ran 2 miles on Monday, I attended a portion of my HIIT class – it’s only 30 minutes- on Tuesday (I was running late because of work) and then I haven’t done anything today!  I need to get back to running and incorporating a lot of those circuit workouts I did during my 21 Day Workout Challenge.  Once I get news of my car, hopefully all is well and I can go pick it up after work then make it to that dreaded 5:45 class that I promised I’d go back to.

BREAKFAST

At our week 1 Health Starts Here class, our Healthy Eating Specialist, Mary Lindsey, shared what she eats for breakfast.  It sounded amazing, so I decided right then and there to buy what I needed and give it a try.  It’s also super simple!  You use Ezekial bread (I chose the cinnamon raisin), peanut butter (I’m using the Whole Food 365 brand because it has no added oil or sugar), sliced banana, honey, and a sprinkle of cinnamon.  It was so good!  I paired it with a cup of Dunkin Donuts coffee with Almond Milk.

 I’ve also been re-using my Whole Foods grocery bag for lunch.  It’s a lot nicer than the plastic bags I usually use and it stands up better.  I’m not worried about holes for my food or utinsels to fall through.

That’s the coconut milk I brought for work so I can have coffee.  I’m also loving the Whole Wheat Corn Muffins you see there.  You use honey and it sweetens them up – Delicious!

I had never heard of Ezekial bread, but really enjoy it now!  Even after the challenge, I will continue to Steam Fry when possible.  I don’t see any reason not too when my vegetables turned out delicious and I didn’t need added oil and fat to do that.

June Bliss – Books, Blogs, & Burgers!

 

Happy Wednesday, friends!

Today we’re linking up our Bliss posts, but before we get to that let’s talk about BREAKFAST & my WORKOUT this morning.  I chose to do a 30 minute walk this morning since my legs are so sore from the HIIT class I took last night!  Man, that class wears me out – think about squat after squat after squat or lunge after lunge after lunge….. ouch!  I came home this morning and had a glass of chocolate milk, a banana, & a boiled egg & vegetarian bacon english muffin!  Now I’m off to get ready for work, but check out what’s been bringing me Bliss this month!

{1} Never Eat Alone

I recently became a “Blogging for Books” Affiliate and now receive free books to review.  You’ll get a full review once I complete this book, but I have LOVED it so far.  Sure, I’m only on Chapter 2, but I already know I’m going to learn a ton!  It’s a business book and talks about networking & relationships.  Stay tuned for my review in a couple weeks!

{2} Jack LaLanne Juicer

I was super excited when I found this beauty at Dirt Cheap for a mere $26!!! I’ve used it a handful of times now and still can’t believe I’m lucky enough to have found it!  If you’ve thought about juicing, I would recommend a Jack Lalanne Juicer, but hopefully you can score a great deal like I did!

{3} Blender Bottle

Not only has this shaker been great for my juices, but it’s been an excellent way to keep up with my water consumption at work.  I’ve had a problem getting plenty of water throughout the day, so I’m working on drinking one blender bottle by 12:30 and another by 4:30 so I at least get about 50 ounces of water during the day.

BLOGGERS/POSTS

I like to dedicate a portion of my #BloggerBliss to new bloggers I’ve been able to find throughout the month!  It helps keep me engaged with bloggers and constantly finding new blogs to support and hopefully new friendships down the road!  I’ve been transitioning my blog into a more health conscious blog so I can encourage myself to eat better and workout more, but also encourage others.  This month I found some really great Healthy Living blogs & posts to share!

{1} Char Eats Greens

This girl became a vegetarian and then quickly became a vegan!  I love finding other bloggers like me!  She’s also a runner & loves Starbucks – clearly we’re meant to be friends!  And if you’re thinking that going vegan means you have to cut out all the good stuff – then you should seriously check out her recipe for Triple Threat Vegan Gluten-Free Brownies because oh em gee… I’m giving that a try for sure!

{2} Sweet Miles: A running & lifestyle blog

I love the clean feel to this blog.  You get there and instantly feel refreshed!  She’s another runner, but I love drawing inspiration and encouragement from other bloggers who run.  When I read about their runs, it helps me envision my own run and gets me motivated.   She’s not all about running though – her goal is a healthy lifestyle.  She created this amazing post for 7 Ways to Maintain a Healthy & Active Marriage and although I’m not married, I could re-title it 7 Ways to Maintain a Healthy & Active Relationship because I think that’s just as important and I felt like most of these could be applied to mine and Nick’s relationship – with the exception of some things due to our long-distant relationship!

{3} Bagels to Broccoli

Another blog that’s clean and refreshing to stumble upon!  Jen isn’t a vegetarian (as far as I can tell), but she works to incorporate more veggies and a healthy lifestyle.  In fact, she recently completed her very FIRST half-marathon! {You can read about that here}

It has been such a treat stumbling onto these ladies blogs and I hope you’ll enjoy them too!

MOMENTS

I, of course, enjoy recapping some special moments from the month and the biggest one that sticks out to me is finally switching my blog over from From Here to There to No Bologna!  I’d been wanting to make a change for so long and I feel like a dream has finally come alive!! It’s still a work in progress, but I love what this space is becoming and how it’s encapsulating my love for health, veggies, & fitness!

I forgot to mention that Nick and I tried out Majestic Burger!  I’m not sure if it’s a local place or if there are chain restaurants floating around, but I went with their veggie burger and it was great!  Plus those onion rings… I could make a meal out of any kind of fried side dish… onion rings, pickles, zucchini, okra… you name it!

Bliss #3

Yay for another month of seeing what is bringing each and every one of you Bliss!  If you’re interested in link-up with us this month or any month after, all you need to know is you share your favorite things from the month – things that have brought you Bliss!

We are finally feeling some heat here in Mississippi and I’m overjoyed!  A few weekends ago, I was at the ball park and at the arts and crafts festival in the Cotton District in Starkville.  Guess what – I got burned.  I’m not a big fan of the tanning bed and I don’t like getting burnt.  I want to preserve my skin and keep it looking youthful, so I knew it was finally time to invest in some sunscreen for the Summer ahead.  Of course, even in the winter you should be wearing sunscreen.  I always have SPF 15+ on my face.  Always.  I decided to take a little further this year though and protect even when I least expect it (i.e. driving in my car).

Talking about getting ready for the summer – swimsuits and short skirts are vastly approaching and I’m head over heels in love with Jergens Natural Glow Moisturizer.  I went with the Firming lotion to help with my cellulite.  I love this stuff.  Even though I don’t tan often, I enjoy having a little “color” on my legs and this keeps me from looking and feeling pasty white!
This month was also my birthday – another thing that brought me complete Bliss.  I love my birthday, but what I love even more are the people who make my birthday special.  My sweet co-host here, Meg, surprised me with some happies for my birthday!
I’m fairly certain I forgot something, but she hit the nail on the head with this y’all!

Back to beating the heat for summer… lastly, I’m loving the new sandals I got!  They go with just about anything, they have great cushion, and they’re so light!
I would have taken a picture with them on my feet if it wasn’t for the Tornado’s that are about to rush through our area and if I had painted my toenails recently.  Either way, I love these shoes!
