Baby it’s cold outside!

Brr… Winter has finally hit Mississippi!  I went to Java Jog yesterday morning and it was one of our very first cold runs.  Thankfully I just got some leggings in that I wanted to try out.  They worked great and I look forward to wearing them this Saturday at my 5K.  I gave myself a sub 30 goal for the 5K because I’ve always wanted to do one that fast and just haven’t yet.  Granted, I haven’t done a lot of 5K’s the past few years since I’ve been running more heavily, but I still consider myself a very slow runner and my motto is usually “Slow and steady wins (or at least finishes) the race!”  I know sub 30 would be awesome to do though, so let’s hope I can pull it off.  For Java Jog, I met up with my usual running partner, Louise.  Her husband is the Marketing Leader at our local Whole Foods.  After running into Mary Lindsey the other night at Lucky Town Brewery, she decided to give Java Jog a try as well.  I finally feel like I’m finding my running buddies in Jackson.  I’ve had some great ones in the past, but it doesn’t always last long because of people moving or getting too busy to keep it up.  Mary Lindsey offered to run with me during my marathon training and all 3 of us stayed together throughout the run yesterday morning.  They’re the perfect pace for me – slow enough for me to keep up, but fast enough to keep me challenged.

After my run, I got my free coffee & I had a smoothie waiting for me in the car.  This smoothie is delicious and it has some great fruit & veggies.  One tip I learned from this recipe is to blend up your spinach first and then you won’t have an issue of your blender getting clogged.  Sometimes I get smoothie happy and throw a ton of stuff in the blender without realizing how it will all mix together and that I should have blended part of it beforehand.  I blended 2 cups of spinach with water, then added 2 bananas, pineapple, and mango.  It makes one large smoothie, but this was the perfect post-run treat on my way to work.

WEEKLY MENU

This week’s menu has been pretty good.  I’ve been trying to cook more of my Health Starts Here approved dishes and not eat out so much.  So far I’ve made vegetarian chili (still have some leftover), pad thai (didn’t turn out as good as I expected, but I’ll have to work on the recipe some), morning glory muffins (which have been a lifesaver in the morning and for snacking), the beginner green smoothies (pictured above), and I have plans to make a hummingbird cake on Friday.  I meant to make the cake earlier in the week, but just never got around to it.  Yesterday I did have lunch with my boss’ wife since he’s out of town the rest of the week and I’m having lunch with a friend today who is leaving for China next week to do missions for a year or so, but other than that, I’ve been very devoted to eating at home and eating healthy.

MARATHON TRAINING

Training isn’t going stellar, I’ll be honest, but it’s going….  On Monday, I did a 3 mile run on the treadmill at the gym.  On Tuesday, I did my favorite HIIT class.  On Wednesday, I did the java Jog which on my training is suppose to be 4 miles, but we did right under 3.  Today, I’m suppose to do 3 miles, but depending on how I feel, I may go for 4 since I missed that yesterday.  Friday I’ll rest to get ready for my long run on Saturday which is just 6 miles.  I have a 5K to get me through the first 3 and then I’ll probably go and do the course one more time to get through my second 3.  Overall, it’s going okay, but I have a lot of room to improve!  I need to better plan my eating schedule so I can be properly fueled for when I do my runs.  I also might talk to my boss once I get into longer runs about switching up my schedule some so I can either come in early and leave early or come in late and leave late so I have more time to get my longer runs in during the week.  Honestly, I’m not sure how he’ll take it, but I might as well give it a try.

Life Update

Hey y’all!  Let’s do some catching up since I haven’t blogged in over a week! {yikes}

LABOR DAY WEEKEND

Nick and I went to Florida again to help his brother & sister-in-law move into their new house!  It turned into quite an adventure of a weekend though when Nick’s dad ended up in the hospital.  Thankfully, the doctors/nurses took great care of him and worked hard to get him out as soon as possible so we could all drive back to Mississippi.  He’s doing good (per my latest update), but has some health issues to take care of now that we’re back home.  Prayers would be greatly appreciated!  Nick and I decided to stick around a little later than anticipated so we could drive back with them in case something happened.  That left me behind for the rest of the week which is why I didn’t get much blogging done.  Even though it was an up & down kind of weekend, we made the most of it and thoroughly enjoyed some quality family time!  Nick and I still managed a very short trip down to Disney World once everything settled.  It was good to see my friend David and we visited Hollywood Studios, Epcot, and Magic Kingdom while we were there.  I’m pretty sure I had more than my fair share of Starbucks throughout the trip and managed to take zero pictures.  Oh well, there will definitely be a next time!  Nick and I will probably be back down in October for the birth of his nephew – now that will be a short trip because I don’t think we’re taking off or missing school for it, so we’ll be down Friday night and back up Sunday night, but it will be well worth it to experience the joy that his brother & sister-in-law have been praying about for the past few years!  We won’t get much baby time, but we want to be there for any errand running necessary while the parents & grandmothers soak it all in!  **Don’t worry about the Starbucks, Trey!  I’ll have us both well caffeinated!**

ROAD TRIP

It’s no surprise to any of you who have been reading for… well a minute (see above) that Nick and I are no strangers to traveling and road trips.  We love them!  I kind of think they’re our “thing”!  Well folks, we’re about to embark on the ultimate road trip and I could NOT be more excited!!

45 Hours on the Road.

It all started with a wedding invitation… from my sweet, amazing, wonderful blog friend & Bliss Co-host, Meg!  I was originally going to fly out there because there was no way I was taking the Alero up to Massachusetts!  I went back and forth on the decision because it was going to be a costly short trip and I’d only be in town for a day and a half, plus I didn’t want to go by myself so Nick would have had to pay for a flight as well.  Then my Alero broke.  Then I was practically forced to get a new car.  Well, because of our love to travel & road trip, we decided that a Prius would be a good investment for me since it gets 50mpg!  Then the debate was whether or not we should spend the money driving up there when I ended up with so many unexpected expenses in August.  I felt so torn between what we should do, but we ultimately decided that the trip was not in our best interest…. then…. THEN…. I filled out the RSVP card with a big fat NO and a sad face, then sent a picture of the saddest note I’ve ever had to send to Nick and expressed my deepest sadness about not going and well…. we went back to the drawing board to really figure out if we could make this work.  We realized that we could visit a lot of people on our way up and back down, with us splitting all costs, it really won’t be that much money in the end for an epic road trip such as this!  We’ll get to see my best friend Lacy in Virginia and shower & stay with her, we’ll get to have Breakfast with our friends, Adam & Tiffany who recently moved to New Jersey, and we’ll get to have lunch in D.C. with one of Nick’s good friends from high school who recently got engaged and we’re excited about meeting her fiance!

It boiled down to this…. we purchased this car for road trips and we finally had the opportunity and availability to make one heck of a road trip up the East Coast and we can manage it within our budget, so we’ll be off next Thursday to Virginia for our first pit stop!  I’ll be heavily documenting the entire thing and hope to have some pointers for you wanna-be road trippers out there!  I’m so excited about this new adventure, it’s something we’ve never done before, but I have no doubt that it’s going to be an awesome good time!  I’m so stoked to see my sweet friend Meg and to also meet another blog friend (she no longer blogs though), Amanda!

WORK UPDATE

I mentioned in my last post that I passed my Series 6 test for Investments, but now it’s on to my Series 63 test.  I scheduled the test for Friday, September 26th at 3:30pm.  Prayers are greatly appreciated!  I shouldn’t have any tests for a couple of months after this one.  We have a new girl working in our office, so I’m spending a good bit of time training her, but I love management & I love working with people!  This also gives me the opportunity to learn even more because if I don’t know the answer, I want to find it out so I’ll know for future use as well.   I really do love who I work with and where I work, which is such a huge blessing!

LIFE UPDATE

I completed the 28 Day Challenge and loved just about every minute of it.  I thought it would change the way I lived, but sure enough… I’ve reverted back to some old ways.   There were so many things that I missed while on the challenge that it was difficult to resist once the challenge was over.  I think I got it out of my system though and I’m slowly finding my balance.  I haven’t been working out as much lately either, but I’m finally on track for this week.  I went to the gym last night and then today I attended my favorite HIIT class – which… holy moly!  I’m going to be sore tomorrow!  I’m not a fan when she decides to take us across the room and that’s practically what we did for the entire 30 minutes!  Tomorrow morning, I’m joining a running group and depending on how that goes, I may be taking a rest day on Thursday, but I have a Kickboxing class planned for Friday!  This week has proven to be a good one and I’m excited about what else I have planned.

Veggie Chili & Whole Wheat Cornbread Muffins

Hey y’all!

How has your Tuesday been?  Mine was good.  I woke up and watched Big Brother while I ate breakfast.  I was extremely pleased with how it ended and I’m excited about tomorrow night’s episode!  I went to work and had a fairly productive, but nicely paced day.  I got about 2 hours of Series 6 studying in, so that was exciting!  After work, I went to my favorite class, HIIT!  We had a sub, but I’ve taken Cheryl’s classes before and absolutely love her!  Today was no different and I had a great time.  I decided to stick around for Abs afterwards and I’m fairly certain my abs are thanking me because they got a killer workout!

I’m on my last week of my 28 day challenge and I decided to make Quick & Easy Veggie Chili with some of my all-time favorite Whole Wheat Cornbread Muffins!  This will be my first time trying the chili, but as it’s simmering it looks pretty dang good!  I’ve had the cornbread muffins before and they’re wonderful!  I can eat 3-4 at a time and I can eat them for breakfast, lunch, and dinner plus snacks in between!

I don’t think the weather is fitting for chili, but for some reason I decided to make it this week.  I think between the simplicity and the leftovers, it become an easy choice.  I could eat chili year round though!

Now, completely off topic… seriously, I have no good transition.

I’ve been having a hard time finding my work/fitness/health/blogging balance.  I know I’m not the only one.  I have a long list of goals and although I’m doing great at work right now and I’m about to get a new certification, I feel like work consumes all of my day because I’m there from 7:30-4:30 without taking many lunches during the week (which is entirely my own fault, I’m not forced to not take a lunch).  With my new healthy eating (thanks to the 28 day challenge) I know my mind is clearer than every before and I could tackle a lot more in a day if I learn how to do so.  As I continue to stick to this healthy eating (at least most of the time) then my desire is to start working on this long list of goals that I have for my life outside of my normal work day.

GOAL 1: Blog 2 times a day.

I started blogging with the idea that blogging once a day was awesome, and seriously… it still is!  The best advice I’ve heard though is to take notes from the blogger you want to be.  That doesn’t mean that you copy someone else or you become a person that you truly are not, but you see what works for the bloggers that you enjoy reading day in and day out.  For me, I absolutely love Julie from Peanut Butter Fingers.  I would love for my blog to reach the level that hers is at.  She blogs about 2 times a day, so to find my success, I want to follow in her footsteps.  I also want meaningful content that matters to ME!  I feel that blogging twice a day will help get me in the habit and allow me to improve my writing.

GOAL 2: Create a blogger event for Mississippi.

I’m not sure what this is going to be yet.  I’d love to do a conference or a quarterly meet-up.  I want to get brands & local business involved with our blogging community.  I have a whole list of goals that fall under this one umbrella.

GOAL 3: Be active daily.

I don’t need a strict workout daily, but I want to live an active lifestyle.  If I don’t have a workout planned for the day, I want to go on a walk, go a leisurely bike ride, take my dog out to the park.  I want to be active!  I do want 5-6 days a week for serious workouts at the gym.  Heck, I’m paying for the membership, so I want to get my money’s worth!  I’m not a strict gym-goer though.  If it’s beautiful outside, I’m definitely going to be outside!

GOAL 4: Eat Healthy.

Thanks to Whole Foods and their 28 day challenge, I’m learning new ways to incorporate eating healthy into my every day life.  It can be time consuming though which is why I feel it’s another goal I need to improve upon and balance in my life.  It’s getting easier, but I still have a ways to go.  I don’t want to cut out everything that I am in the 28 day challenge though, I just want to eat it in moderation.  I will probably cut back heavily on my dairy because I think the benefits are amazing for me personally.  I have a serious sweet-tooth, so I’ll continue baking & enjoying sweet treats, but again… in moderation and I’ll be more selective about what I choose to make!

I’m looking forward to what the rest of the year holds and all the things I’m able to accomplish by then!  My mind feels sharp, I’m motivated, and I have my goals!  I’ve been talking about these for a while now, but I finally feel like I’m at a place where I can work towards them!
