#Mississippigirl at an #AlabamaBlate

Good morning, sweet friends!  I wanted to introduce you to some fabulous girls I had the unbelievable pleasure of getting to know this past Saturday!

Originally, I had seen a post by Ashley from Wanna Be Green, about an Alabama Blate.  Well, I live about 30 minutes from the Alabama State Line and asked if they would welcome a Mississippi girl and she said OF COURSE!  I was SO excited, but so nervous at the same time.  Just FYI and possibly TMI, but when I get nervous, I sweat… so I was sweating the whole way there, that kind of nervous excitement!

So I arrive at Urban Standard, which by the way, I thoroughly enjoyed! I got a chicken salad sandwich and this delicious strawberry cupcake!  So anyways, on to my ladies!

I met some of the sweetest girls and it was fabulous because you know how it is when you bring 9 girls together… chances are, you may not like one of them, girls can be catty!  This was absolutely NOTHING like that though, we all got along really well and enjoyed each others company.  I felt so blessed, I seriously think I gained 8 new BFF’s!

After B-ham, I headed down to Jackson to see 2 of my very best friends before they move to Colorado!  I joined them for church Sunday morning and then enjoyed some Cracker Barrel for lunch.  I managed to hold back the tears, but I’m sure they’ll be coming throughout the week as I realize that my best friend is not as easy to visit.  Although, she did live in London for a period of time, and we managed.  I’ll be making a trip out to Colorado this summer, for sure!

Baked Tacos

Happy Saturday!

Since I’m on my way to B-ham to visit some bloggy friends, I thought I’d give y’all a recipe for today.  I’ve seen pins all over pinterest about baking tacos.  The ones I’ve seen had all these special ingredients you can add, well I’m just a simple girl, and I make my tacos basically the same way every time.  I decided to throw out the fancy recipe and do it how I felt like it!  So here is my version of a baked taco, it’s super easy, super delicious, and I loved it!

Ingredients:
Choice of meat (chicken, beef, turkey, or a vegetarian form)
Choice of taco seasoning (I always use the McCormick, and I picked the 30% less sodium)
Cheese
Taco Shells
Any other ingredients you want to throw in there
Salsa

Directions:
1. Brown your meat.
2. Follow the instructions for seasoning your meat
3. Place taco shells in upright position in a baking dish
4. Fill taco shells with seasoned meat and cheese
5. Bake tacos at 350 degrees for a few minutes (5 maybe?) I didn’t time it.  I just waited for the cheese to melt.
6. Add any other extra toppings you want (for me, just salsa!)
7. Enjoy!

The shell softens a little bit so your shell isn’t cracking everywhere when you bite into it and it’s just wonderful!  I think I’m going to make my tacos like this from now on.  It is one tiny little extra step, but it’s the easiest of all easy and I really do enjoy the new texture of the taco shell.  I’m all about texture!

After baking my tacos, I cracked open the door (obviously, with magazine holders) so I could listen clearly to the fabulous rain that is overcoming our area while enjoying my baked tacos!  Am I weird that I seriously LOVE it when it rains or thunderstorms?  BTW, I ate FOUR!  Yes, I can be a fatty sometimes, but it was good.

So how’s that for possibly being the worst “recipe” blogger ever!  Legit, right?!  So try it!

Friday Letters!

I always enjoy linking up with Ashley at The Sweet Season for Friday Letters!  She announced last week that she is pregnant!  I’m so happy for her and her sweet family, she is absolutely one of my favorite bloggers!  Her and her husband have had many trials and have continued along this journey in prayer.  I just wanted to take a minute and say how honored I am to have the opportunity to follow along in their life and that I am daily blessed by the things she posts on her blog!  She is a very inspiring and encouraging woman of God!

Dear Blog BFF’s, it’s amazing the relationships I’m building with each of you!  You’re all so different in your own special way and I feel like we really connect and could be IRL friends, for sure!  Thanks for coming back day after day and spending time with me!  Dear fugly toes, I noticed you needed some TLC while I was at yoga yesterday and it may just be time to splurge on a good ole’ pedicure!  Not gonna lie, I was a tad embarrased to be seen with you!  Dear Job, thanks for giving me only 1 day home over the course of the next week due to traveling I need to do.  It’s Ok though, I’m kind of excited about it and it’ll be nice to go somewhere, but I know when next Friday rolls around, I’ll be ready to get home!  Dear Blog Inc., I’m loving you!  You’re such a fun read and I’m excited about building a better blog and connecting with my readers more!  Dear Crazy Love, I’m enjoying you so far, I just started you, but I love the perspective I’m getting and I hope you have a lot to teach me, because I know I need it!  Dear #Alabamablogger #blate this weekend, first of all, thanks for letting this hard-core Mississippi girl join your fun!  I’m excited about meeting some bloggers in real life and connecting with some new friends!  After this, I may choose to have a MS blogger meet up, and you’ll be more than welcome to join!  Dear twitter, why oh why do you not alert me when something happens?  It’s frackin’ annoying!  I hate having to check up on it myself, I just want you to tell me when someone follows me or says something!  The notification settings are no help either! grr…. Dear Carabox exchange, you REALLY did well!  I enjoyed getting paired up with Hillary and I can’t wait to show off what I got in my box!  I’ve already instagramed it and it’s fabulous!  Y’all should check out my sweet friend Hillary, she’s a new blogger and has just started this juicing and cleanse!  She believes in taking care of health issues the natural way which is what she’s doing and I am just over the moon encouraged by her!  And since we’ve met, she has e-mailed me every week to see how I’m doing and what I have going on, seriously, SO SWEET!  Oh, I forgot to mention that she too is a Mississippi blogger and doesn’t live too far away, so we’ll be going on a blate soon! FYI!

Hope y’all had a great week and have some excellent weekend plans in store! As I’ve mentioned a million times over, I’ll be heading out to Birmingham for my blate, then heading home to see my family and see my best friend for the last time before she moves to Colorado!  Wish me safe travels and I’ll “see” y’all soon!
