Yay for Friday!

Dear Friday, thanks for your return! I’m hoping to enjoy you this evening with a nice cookout!  Dear Taylor, you’re the WINNER of my favorite things giveaway! Congrats! I’ll e-mail you today.  Dear Clara, girl, I promise you’ll get your string art!  Dear weekend, I truly don’t know what you hold, but I’m thinking I’ll choose to enjoy it!  Dear triathlon training, it’s about time to get started.  I think I’ll begin with a swim this evening… bless my soul!  Dear Meg, you should probably get use to a letter frequently now because I’M THAT EXCITED TO MEET YOU AT DISNEY WINE&DINE!!!! Dear Lacy, Noelle, and Chelsey, we’re going to have a blast roadtrippin’ to DisneyWorld and having tons of girl time and eating and drinking and running!! whoo hoo!! Dear Bama Ladies, don’t know if I’ll be making it this weekend cause nothing has quite been decided as far as time and location… I’ll miss y’all, but maybe next month?  Of course, y’all are always welcome to road trip it to Starkville!  Any takers? Bueller?… Bueller?… Ok then.  Dear Starbucks Friday, I’ll enjoy you at home in my Starbucks coffee mug (broke-girl version for now)  Dear Francis Chan, I’ve enjoyed reading your books so far and I’m thankful that God has chosen to speak through you to the rest of the world!  What a beautiful picture of a servant and his master!

What’s OK Today!?

It’s OK…
 
… to love my morning coffee
 
… to choose to do my first tri-athlon 25 days before the race! eek!
 
… to be nervous as heck to do it, but it’s super short so I think it’ll be fine! (200y swim, 8m bike, 2m run)
 
… to love the training plan I’m on for the Disney Wine & Dine Half-Marathon
 
… to feel really sorry for all of my readers who will probably get exhausted about hearing about this race until November… I’m just WAY too excited!!
 
… to be nervous that the race is already 80% full and I have about 2 more weeks until I’m able to register!  *Please don’t fill up!*
 
… to enter my favorite things giveaway **These are a few of my favorite things…** Can’t you just hear Julie Andrews now?
 
… to be super happy the students are moving their happy tails off campus this week now that finals are over.  Campus will be peaceful over the summer! yay!
 
… to hope and pray and wish that these 2 job opportunities would call me this week and let me know if I get an interview!
 
… to have a little over 3 months left as a VISTA, I’m going to miss my sweet friends!
 
… to love Thursdays! Seriously, Friday is calling my name, it’s so close! 🙂

Apple Cinnamon Pancakes {Vegan}

I recently discovered the most amazing pancake recipe and it’s 100% vegan!  I’ve mentioned before that I absolutely love this vegan cookbook called Vegan Cooking for Carnivores by Roberto Martin.  I made his vegan buckwheat pancakes last week and fell in love! I decided that this girl would no longer be making non-vegan pancakes.  I froze the leftover batter and later in the week made those same pancakes for a vegetarian friend and she loved them!  It was during that visit that she began contemplating going vegan.

I recently received my first VoxBox from Influenster and got a box of 100% natural organic monk fruit sweetener.  On Nectresse’s website, they have a recipe for some apple cinnamon pancakes!  I decided I would take their delicious recipe and put a vegan spin on it and it was a huge success!  Again, I froze the remainder of the batter and that’ll make it easy to whip up some over the weekend.

Ingredients:
1 cup Buckwheat flour
1 cup Organic, unbleached, all purpose flour
1 tbsp. + 1tsp. Baking Powder
2 1/2 cups Non-dairy Milk
1 tbsp. Agave Nectar
3 packets Nectresse No-calorie Sweetener
1 tsp. Cinnamon
1/2 tsp. Salt
4 tbsp. (1/2 stick) (1/4 cup) vegan butter, melted
1 tsp. Vanilla Extract
1 cup Chopped Apple
Non-stick Cooking spray
Directions:
Combine Flours and Baking Soda.
Whisk in Milk, Agave Nectar, Nectresse, Cinnamon, Salt, Butter, and Vanilla
Stir in Apples
Spray non-stick spray to your skillet and flip pancake after batter bubbles.
Serve with vegan butter and maple syrup.
I like to add some jam to mine (You see Raspberry above)
I hope you enjoy yourself some vegan Apple Cinnamon Pancakes and feel great knowing that they’re a healthier, animal and planet friendlier version!
