My sister is going to kill me, ya’ll! (Did I just sound like Paula Deen?.. probably!) I have been promising her a How I Met Your Mother post and I promise, IT IS COMING! If there are any fans out there, be sure to look for that post coming this week- I have some fabulous finds!
I wanted to take today to post about the Disney Princess Half-Marathon though, it is literally LESS THAN A WEEK AWAY NOW! I’m a little nervous for a few reasons… 1. I haven’t even gotten in a really good long run since my last Half at the beginning of January! (most I’ve done is FOUR, pathetic!) 2. I have had such a rough week at work the past 2 weeks that I haven’t been eating all that great either. So I went to the store today and stocked up on some healthy food choices for while I’m at work and while I’m at home, I wanted to share some new finds with you!

Hummus with Pretzels, yes! My new favorite snack item right here!
Easy dinner with good protein… frozen already cooked chicken!
Hillshire Farm Grilled Essentials (Lemon Pepper for me please!)
And this has been a favorite for a LONG time, not something new to me, but Nick and I love making this bean corn dip thing (we don’t really have a name for it) but we got the recipe from his brother and it’s our go-to healthy snack!
2 cans Rotel, drained (diced tomatoes with green chiles)
2 cans Black beans, drained
2 cans white shoepeg corn, drained
1/2 bottle of Italian dressing (we usually go fat free for extra healthy!)
some diced green onions (depending on how much you like the flavor, we like a lot!)
Mix it all together and enjoy with some tortilla chips
Our favorite find are the blue corn tortilla chips
