Running Update + 21 Day Challenge

Happy Thursday!  I hope each of you are having a fantastic week and if you’re traveling for work or Spring Break, I hope your travels are safe and fun!

Back in October, I signed up for the Mercedes Marathon.  I was excited to finally commit to my first full marathon.  In December, when I was visiting Nick’s brother in Florida, I started having some intense knee pain.  I went to a Chiropractor and a Knee Orthopedic Surgeon with no relief.  I stopped running altogether and even doing a 1/4 mile caused me to limp.  The Chiropractor helped straighten up my back issues which has created major relief in sleeping and life in general, but even when I would run, there was still pain.  I finally decided that I couldn’t run the marathon, so Nick graciously stepped up in my place and ran his first full marathon.  My next decision was to change shoes.  I figured since it wasn’t my IT band and it wasn’t any other major issue, then it must be my shoes.  My right knee has always been weak since I injured it as a Senior in Highschool, but I don’t believe it’s weakness was the major problem.  I’m still working to strengthen my knee and build it up to support a long steady run, but I purchased some new shoes a few weeks ago.  I haven’t had much of a chance to run lately, but I did a 2.3 mile run in Jamaica and I did a 1.86 mile run last night.

When I was in the midst of my pain and injury, doing a 1/4 mile felt exhausting and frustrating and overwhelming.  I couldn’t figure out what was wrong.  Being able to run almost 2 miles is rewarding now!  I’m so glad the new shoes are working out.  I’m still taking it slow and steady and if I feel any discomfort, I slow down to walk.

Yesterday after work, I went straight to the park for a run.  I completed 1.86 miles with little to no pain.  My knee felt uncomfortable from time to time, but again, I know it still needs some strengthening.  I would slow to a walk for a minute, then get back to running.  I’m happy to say that today I woke up without lingering knee pain.  Before I would run a small amount and my knee would ache for a whole 24 hours afterwards.  Not this time!!  I’m happy to say that I’m on my way back to running consistently and I already have the Disney Princess 2016 in my sights.  Nick’s sister-in-law, Kathryn, will be running that race with me and it will be her first half marathon!

I went with Mizuno’s this time.  I haven’t been impressed with my last Newton’s so I wanted something new.  So far so good.  Also, these capri leggings… Sam’s Club!! They’re my favorite pair of workout pants right now – excellent compression, comfortable, stylish, thick, and they have a small key pocket on the top band.  They were only $14.  Seriously!?  Me, Nick’s sister, and his sister-in-law all got a pair when we were in Florida over Christmas.  I think they’ve been just as impressed with these leggings.

After my run, I headed to the gym so I could do some strengthening on my knee, but realized that it was a few minutes before the Pilates Reformer class, so I checked the schedule and saw an open spot available, so I went to the class for an over all toning workout plus solid core work.

21 Day Challenge!

Again, surprise surprise, I’m going for another challenge.  I’m pretty sure I would be extra fat and lazy if I didn’t challenge myself because my mind and body want to be fat and lazy half the time I feel like.  Do you ever feel that way?!  I can’t discipline myself to wake up and go to the gym and if there are free donuts in the office kitchen, I’m probably having 1 or 2, okay 2.  So I have to create challenges for myself.  Nick loves them just as much as I do.  There are a lot of times where we challenge each other and the winner gets a prize from the loser.  This is just my own personal challenge though.

Eat Engine 2 / Health Starts Here Approved for 21 days.  There is some minor flexibility in this – if I can’t get the correct tortilla shells or if I have some left over veggie meat that contains oil in it, then I’ll incorporate it in my meal.  This is to save money.  For the most part though, I’m 100% in this.  I went grocery shopping last night and spent way too much money, except I got a ton of things that are great for me and got me extremely excited for eating right again – so I guess it’s entirely worth it.  I also took advantage of buying in bulk.  When you buy in bulk at Whole Foods, you get 10% off.  I stocked up on Garbonzo beans (for hummus), Red Kidney Beans (for chili), and Pinto Beans (for a quick dinner w/ cornbread).  All of these are the no salt added kind.  I’m very pleased with my overall purchases last night and I can assure you, I will not be eating out for the next week.

I  was starving for dinner, but had a plum to curb my hunger so I could think through what I wanted to make.

For dinner, I made chili – which has become my go to recipe because you basically just dump everything in and wait.  I saute onions first with the spices (cumin, garlic powder, and chili powder), then toss in diced tomatoes and red kidney beans.  I’ll usually throw in some frozen corn too.  I made my favorite whole wheat corn muffins to pair it with.  I’ll also use these for pinto beans.

The other part of this challenge is working out.  I have to work out 5 days/week for at least an hour.  If I can stick to the Whole Foods diet and work out 5 times per week for an hour, then I’m treating myself to a fitness band/watch.  I really want a fitbit to keep track of my steps, but I want it to include a heart rate monitor.  I also want a GPS watch though, so either way – I’m getting one or the other.  I’m thinking the fit bit first since I’m not heavily running yet, but then this summer, I’ll figure out another challenge to get me the GPS watch.

My Dream Job

What I do: Currently I work for a Financial Advisor at an Insurance & Investment Company.  I absolutely love what I do and I could not be more blessed to work for the guy that I work for.  It’s a very detail oriented & tedious job, but it’s right up my alley.  I manage a lot of paperwork and client service requests along with any and every detail to running his business.  I have the best professional relationship I could ask for with my boss and I truly believe that the company I work for has the client’s best interest in mind.

Thankfully I have a great job and I love the people I work with/for, but I can’t help but imagine what my dream job would be. Don’t get me wrong, a stable 8-5 desk job isn’t terrible, but it’s a very sedentary lifestyle for someone who wants to be active and live a long life.   If I didn’t have this job or if something happened to it, what would I decide to do?

  • Blogger

Obviously being a full time blogger is most bloggers dream!  Who wouldn’t love a job where you can work when and where you want?  Who wouldn’t love a job where companies pay you to travel various places around the U.S.?  My favorite blogger is no secret, Julie @ Peanut Butter Fingers has the perfect blog job set-up in my opinion and I dream of having the same set-up one day.  She travels all around attending fitness expos and writing about health/wellness experiences!  She is a food ambassador for a few different companies and gets to tour their factories.  She also does stuff on the side like teach classes at her local gym.  If you’re a full time blogger, that gives you time for part-time jobs you’ll also enjoy as well plus time to volunteer!  One day, hopefully I’ll have my own Blog Travel page!

  • Travel Wellness Coach/Activist

What I wouldn’t give to have the opportunity to travel places for 4-6 weeks at a time and assist people with their health habits!  I have a lot of family that currently deal with health issues and I would love the chance to live with them for 4-6 weeks, transform their diet to a more plant-based diet and record (blog) the results  of their health’s improvement.  I could cook their healthy plant-based meals and go on daily walks with them.  I could eventually be so successful from blogging the results that others would hire me to travel to their location and cook healthy plant-based meals for them over the course of 4-6 weeks.

  • Whole Foods

Again, it’s no secret that I have a deep rooted love for Whole Foods!  I have 95% converted my grocery shopping to Whole Foods and I love just walking around and seeing what new products I can find.  They have the greatest vegan double chocolate cookies & they mark the products in the store that are Engine 2 Diet & Health Starts Here approved.  This is another company that I truly believe in what they stand for and want to be a part of the positive changes they’re making in the world.  I think I would enjoy a full-time job here, but would also find joy in a simple part-time job in addition to what I do on a daily basis just so I can be a part of this company.

  • Disney Marketing

I didn’t have the greatest Disney College Program experience.  It wasn’t awful, but working my tail off and making minimum wage isn’t exactly my idea of a dream job.  I think if I had worked in a different role, I would have enjoyed it more.  Ideally, I would love to work in the marketing department at Disney.  Also, I wouldn’t want to work directly inside a park because I’d still like to enjoy myself on my days off by visiting the parks.

Do you ever think about what your dream job would be if you weren’t doing your current job?  Maybe your current job is your dream job!  Even if you love your job, like I do, you may have your heart set on something “different” and “unique” or maybe it’s the most normal job in the world, but you’d be happy doing it 24/7/365.

Favorite Things #3

Happy Hump Day Everyone!  Hope you’re having a great week.  I’m keeping to my New Year’s Goals and we’re moving right along to my 3rd installment of Favorite Things this year!

  • Corn Flakes

I’ve been wishing & hoping for a light cereal that doesn’t feel like I’m gnawing on fiber & cardboard with this Engine 2 Challenge.  I finally found one that was allowed on the Engine 2 Diet and it’s these light and flaky cornflakes that are sweetened with fruit juice and have no oils.  They remind me of eating fruity or cocoa pebbles with their airiness.  I have to be careful not to make them an entire meal though because they are not full of protein or fiber like the other Engine 2 cereals out there.

  • Hemp Hearts

The other night at the Engine 2 Meet-up, Mary Lindsey passed out samples of Hemp Hearts.  I’ve never had Hemp Hearts before, but I know Mary Lindsey loves them and puts them on a lot of stuff.  To improve the nutrition of the Corn Flake cereal and provide more fiber & protein, I tossed the packet of hemp hearts with the cereal and it’s been great!  I’m going to buy a bag of these to start adding to lots of stuff for an extra punch of nutrition.  I look forward to seeing what it tastes like on my Ezekial Bread Toast in the mornings.

  • Coconut Water

This past week, I’ve been working out a lot more than I had been the past few weeks.  I’m actually feeling sore and straining my muscles to fatigue.  I love this feeling of accomplishment, especially after so much knee pain – I’m feeling stronger and I actually ran a 1/4 mile last night on the treadmill.  The other day after an intense leg work out, my muscles were cramping a little so I threw in some coconut water to my smoothie.  I love the benefits of coconut water, it has so much more potassium than bananas so it helped my cramping really well that night.  I was afraid I’d wake up with Charlie Horses  throughout the night, but that didn’t happen!

  • Mississippi Women Bloggers Community

I’m so thankful for this wonderful community and I look forward to everything we have planned for the future!  I enjoyed our first meet-up and meeting some other MS bloggers was exactly what I needed.  We’re planning a “work day” to all focus on our blogs and help each other improve.  It’s going to be great!

  • Nick’s Sister-In-Law & Nephew in Town!!!!!

This is probably my favorite thing in the world right now!  Nick’s brother is also in town, but because of work, I doubt I’ll get to see him.  Today after work, I’ll be meeting Kathryn & Cade for a  walk and then tomorrow we’re having lunch at Whole Foods together!  I am just so excited to see them and see sweet baby Cade.  Just from pictures I’ve seen, he’s already grown up so much!  These next two days are going to be amazing!!

  • Whole Foods Market Jackson One-Year Anniversary

It’s not surprise that I love love love Whole Foods and I was so excited when they arrived to Jackson, MS.  Today is their One Year Anniversary of being here and I’m excited to stop by over lunch to see what all they have going on.  I’m sure there will be samples & demonstrations, plus I’ll probably grab a little snack while I’m there.  I’ve highlighted some of my favorite posts from there over the past year!
