Happy 26th Birthday to Me!

Well y’all, it’s been another year of life.  Today is my 26th birthday and I’m celebrating the crap out of it!  I’m currently in Orlando for a work conference, but guess what?  That conference ends today at 3:00pm. Then it’s off to Disney for celebration galore with Nick, his brother, sister-in-law, and nephew.  We have dinner plans, Festival of the Lion King plans, and Fast & the Furious 7 plans.  Plus, have you heard that there’s a new vegan bakery in Downtown Disney?  I’ll have one of everything, please!

I can’t help but think about how blessed I am.  I have 26 years of life behind me – each year has had it’s share of good & bad, of course, but when I look at the big picture, I am just so incredibly thankful for this life.  Thankful for the people I get to celebrate life with – family, friends, nick, co-workers, and other’s that I volunteer with or encounter throughout my day.

I know it’s completely blogger cliche, but I figured another great way to celebrate (besides everything else I have planned) is to share 26 things I’m thankful for.

1. Being able to celebrate my birthday at the happiest place on earth – with some of the best people I know!

2. Forgiveness.

3. A good Starbucks coffee.

4. The relationship I have with my sisters.

5. Dogs that love you even when you accidentally step on their tail or don’t let them run out the front door to chase the squirrel they have their eye on.

6. Making blog friends that become real friends.  It’s such an odd thing when you think about it, but thank goodness it exists!

7. Vegetarian/Vegan options at a restaurant.

8. Being able to live with my parents to save money, pay off debt, and accomplish things I otherwise wouldn’t be able to.

9. Cute planners!

10. Legs that can run/walk/jump/bike.

11. Girls on the Run.  This program is teaching me so much and the girls I am blessed to spend 2.5 hours a week with have truly carved out a place in my heart!

12. Life Lessons.

13. My job & my boss.  Flexibility, trust, and ownership I’m given.

14. Prius & low gas prices.

15. Healthy eating education.  Not everyone knows what it means to eat a healthy balanced meal, and I’m so thankful that I do.

16. Sunny days, especially after a long stint of rain & clouds.

17. Technology that lets me stay in touch with long distance friends and family.

18. Prayer.

19. Fresh fruits and vegetables.  The beauty they bring to the world and the nourishment they provide my body.

20. A homemade delicious black bean burger – you can’t find that every where.

21. Community Service.  It proves that there are people trying to make a difference in the world and it’s an experience that can humble a person.

22. Education and the vast amount of resources at our disposal. Getting a college degree is not where it ends.  We can constantly learn new things thanks to the internet, libraries, and people who simply want to educate others about their passions/expertise.

23. Things that simply remind you God is there and is deeply in love with you.  We all need that from time to time and it can come in the form of friendships, nature, experiences, and much much more!

24. Words of affirmation.

25. Unexpected gifts or cards in the mail.

26. Of course, having a very best friend in Nick.  I’m so thankful that we love 12 hour car rides together and running around Disney, that we are willing to take spontaneous trips on occasion, and that sometimes a date night revolves around How I Met Your Mother and a Papa Johns Pizza.

Roasted Brussel Sprouts

I am so excited to share this recipe with y’all today.  I decided to buy a bag of brussel sprouts on my last shopping trip.  I had no clue what I was going to do with them, but they looked pretty and I had never had brussel sprouts before.  As a vegetarian, I felt that it was finally time to give into the stereotypical “gross” vegetable and see what I could make of it.  I knew I was going to roast them and I seeked out some recipes on pinterest (of course!) but I didn’t find a recipe that either sounded good or that I had the ingredients for.  What does a blogger do?  Create a random recipe and hope for the best!

Tuesday night, I made yet another trip to Whole Foods.  The amount of charges on my card from Whole Foods is embarrassing, but I can’t help how I feel about this grocery store.  Plus, I find contentment by just walking around a grocery store, even more so a Whole Foods grocery store because of all the beautiful produce and natural options they provide.  Sorry, back to my story – I was in Whole Foods Tuesday night and they had the owners of Delta Blues Rice sampling their long grain rice and rice grits.  I had never had rice grits, but I gave them a try and instantly fell in love!  I picked up a bag right away.  When I was scrambling to decide on dinner last night, I came up with a combination of Rice Grits and Roasted Brussel Sprouts.

Roasted Brussel Sprouts
Recipe Type: Side Dish
Cuisine: Vegetable

Prep time: 5 mins
Cook time: 20 mins
Total time: 25 mins
Serves: 1
I served these Roasted Brussel Sprouts over Delta Blues Rice Grits.
Ingredients
  • 1/2 bag of brussel sprouts
  • 2 tbsp low sodium soy sauce
  • 1 tsp garlic powder
  • 1 tsp sesame seeds
Instructions
  1. Preheat oven to 400*
  2. Wash and cut brussel sprouts
  3. Mix soy sauce, garlic powder, and sesame seeds in a bag
  4. Add brussel sprouts to the bag and shake to coat evenly
  5. On a baking sheet, make an aluminum foil bowl and pour the coated brussel sprouts in the bowl
  6. Roast for 20 minutes, tossing halfway through, adding a small amount of soy sauce if needed
  7. Serve over rice

The timing turned out perfect with this recipe.  I put the rice on the stove to start boiling and preheated my oven.  While waiting on that, I was able to prepare the brussel sprouts, get them wrapped in aluminum foil, and by that time I was ready to start simmering the rice for 20 minutes and putting the brussel sprouts in the oven for 20 minutes.

I’m excited to see what else I can try on these Rice Grits.  They have some good looking recipes on their website that I think can easily be adapted for a vegetarian.  I’m definitely going to try out the risotto.  I love supporting local Mississippi businesses and farmers, I’m so glad that I ran into Whole Foods Tuesday night so I can get introduced to Delta Blues Rice.

Healthy Mexican Cooking Class

Good Morning!!  I love Wednesdays – they’re half way through the week, so you get excited about the weekend coming up, and I get to go to Java Jog!  Java Jog has become one of my favorite weekly activities.  I love the girls I have the privilege of running with and seriously… WHO DOESN’T LOVE A FREE CUP OF COFFEE?!  Anyways, I could go on and on about how much I love a good Wednesday morning run and sipping on this cup of coffee, but I’ll move on with my blog post for today.

On Monday night, I was able to attend the Healthy Mexican Cooking Class at Whole Foods.  Mary Lindsey text me the night before about it and told me she had an available spot if I wanted to come, and of course I did!

We started out with an appetizer on the table, chips & guacamole – yum!  As I got upstairs, Mary Lindsey mentioned that it was half priced pint night, so I decided to liven up my Mexican with a nice Mississippi brewed beer from Lucky Town Brewery. (water on the side)

I love the cooking classes at Whole Foods, especially the Healthy ones.  Mary Lindsey does such a great job going through the recipes as quickly as she can, while also answering each and every question that comes her way.  Here is a list of all the recipe’s we went over on Monday night:

First, we made the 2 types of salsa – fire-roasted salsa and roasted tomatillo salsa.  While they refrigerated, we made the honey-lime dressing for our salads.  We topped our salads with roasted pumpkin seeds and it was a delightful second appetizer of the evening.

Mary Lindsey prepped the rest of the meal in front of us and afterwards we were able to assemble our own tostado.  The tostado included black beans, pineapple jicama slaw, guacamole, and both salsa’s.  I had never tried or really heard of Jicama before, but I do believe I thought it was pronounced Jicama and not Hicama, until Mary Lindsey pronounced it on Monday night.  She passed a bowl of it around for us to try and it was surprisingly delicious.  It reminds me of an apple, pear, cucumber, and potato all in one.  The outside looks like a potato and it cuts like a potato, but the taste is sweeter like a pear, and it’s crispy like an apple, but watery & light like a cucumber.  It’s pretty amazing.  My goal is to find a lot of Jicama recipes to share with y’all on a blog post one day.  They don’t provide a ton of protein, but they’re very rich in fiber and they taste just fine on their own as a snack if you cut them up into matchsticks.  You could also dip them in hummus or a bean dip.

We wrapped up our evening with personalized tostados that turned out delicious!!  I may have put too much tomatillo salsa on mine because it was way spicy for me.  There were some leftovers so I made a second one to complete my dinner for the evening and put a little less of the spicy salsa this time around.

Lastly, Mary Lindsey already had dessert prepared for us and I was a little skeptical whether or not I would like it, but it turned out delightful and refreshing.  I’ll definitely be making these throughout the summer to keep on hand in my freezer – Mango Lime Pops.  I love any recipe that is easily adaptable to taste, I guess most recipes go that way, but some are easier to change up than others to ensure you’re still getting decent flavor.  I’m not a big Popsicle person and I can’t typically finish one, although I enjoy having them on a hot summer day, so these smaller healthier versions will be right up my alley!

Thanks to Whole Foods for another wonderful healthy cooking class and thanks to Mary Lindsey for all the hard work she puts into each and every class she teaches.  She also has a wonderful Sous Chef by her side at each of the cooking classes and he does an excellent job answering questions, providing input when it’s appropriate, and helping Mary Lindsey any way he can!
