Week{end} Re-cap!

Friday night was a perfect evening with the boyfriend.  We did a “Disney Themed Movie Night!”  If you’ve never done it, I strongly encourage it!  We had a great time with some Greek gyro’s and our movie of choice: Hercules!  We had this great idea a few months ago and haven’t been able to do it often, but we plan on pairing food and movies like Chinese food with Mulan, Italian food with Lady and the Tramp.. and getting creative, we could do Pizza and Toy Story (Pizza Planet!).


It was a relaxing evening, good food, and good movie!  Perfect date night, and it’s inexpensive, so if you’re on a budget, I strongly suggest it! 

Saturday was spent working on this blog and working on some work for the job.  I was recently asked to do my first product review, so I worked with that on Saturday as well and I’m so excited to show y’all what I’ve come up with and share the opportunity to give it away!  Post will be coming in a week or so!  Saturday morning was so relaxing, I caught up on some blog posts from you lovely people, enjoyed a pot of coffee using one of my Christmas holiday packets I got in my stocking this year, and I added some whipped cream and cinnamon, perfection!


Saturday Night, the boyfriend and I attempted a bloomin’ onion and boy was that thing good!  You can find the recipe {here}!  It turned out so great y’all! It had a wonderful spicy kick to it, the sauce tasted just like it does at a restaurant.  

We tried using this device that nick had in his cabinet that was suppose to slice it into a blooming onion, but it didn’t work out so well, so we ended up with 2 separate parts of the bloomin’ onion!  It’s ok though, we went along with it.


I wasn’t patient enough to get a good pick of it finished with the sauce, but it was amazing!  Nick really loved it and I’m pretty sure we’re going to make it again, but we may try a “skinny” recipe so it’s not so unhealthy.

We also made our famous avocado salsa!  We got the recipe from {here} and it’s become a favorite that we make frequently!  We also eat it with blue corn chips, it’s just amazing that way!  Seriously you must try it!  We make it for friends and then they become obsessed.  We always joke about inviting them over when we make it, but then realize that we probably wouldn’t get any, so we don’t! Yeah, we’re selfish that way!

Sunday was pretty much a lazy day, I got some good house cleaning done and I did a little more blogging.  I also purchased my Erin Condren planner! YAY! I wasn’t planning on getting one, but I seriously need it… My life feels so chaotic at the moment, I can’t wait to have my goals and to-do lists.  I’d love to use more for the blog to help that grow as well.

Hope y’all had a great weekend like I did.  This was a MUCH needed recharge.  This past week was just plain crummy, so the weekend helped out a lot and I’m ready to hit the ground running tomorrow, hopefully with a good workout!

NOLA Rock n’ Roll Half Marathon dilemma!

I’m in a dilemma….  I can’t decide if I should sign up for this race.  I’ve been training for it and I’ve been planning to run it, but it cost $110, which is a lot for this small budget.  I have the money right now, but I worry if it’s the right choice to spend my money on.  It’s not just the $110, I also need to have the money to travel down there.  Luckily I have a friend that I can stay with, but I’m struggling with whether or not I should sign up.  I also didn’t do so great with training this past week, so I think I’m also a little discouraged about that.  I have until Tuesday to decide because that’s when the price gets jacked up and I just don’t know what to do.  I have a list of things that keep me going back and forth.  This is what I love about the blogging community though… you all can help me decide!  I’m going to write out a list of things that are making me go back and forth and if you have any encouragement, advice, or whatever, I’d greatly appreciate it!


1. The cost, obviously.  $110 by Jan. 15.  I have the money, but I’m not sure if it’s responsible to spend it.
2. My training has been lacking this week, although I got back on track yesterday, I’m hoping I can keep it up.
3. I’m worried that if I don’t sign up though, I’ll stop training all together.
4. I could find a cheaper race and just give myself longer time to train, but I’m starting to realize that you have to sign up for stuff WAY early to get a good deal and it’s hard for me to commit a year in advance.
5. I’ve told so many people that I’m doing this race and I don’t want them to think I’m a quitter and I don’t want to feel like a quitter thinking that they’re thinking that.
6. I’ve never been to NOLA and I have been looking forward to it and I thought this was a great way to spend my first visit there.

Friday Letters!

Dear Disney, oh how I miss thee!  I look forward to visiting or working soon!  I have a possible trip planned in May and I may be back for a professional internship in August, we will be reunited soon!  Dear weekend, I’m so glad you’re here!  Although you will more than likely be filled with some work things I need to get caught up on, so I guess totall relaxation is out of the question.  Dear training, I’m getting back to it today (hopefully).  I haven’t run today yet, but it’s in the plans!  Dear NOLA Half-Marathon, I haven’t registered for you yet, but the price goes up Tuesday, so I need to do that soon.  Dear bloggy friends, y’all make me smile, seriously! I have 90 followers… I’m in shock, I know that may not seem like a lot to some of you, but I’m humbled by this! I’m looking forward to my very first and fabulous giveaway when I hit 100 and getting me a new blog look!  If you want to help this girl promote, tell your friends!  Dear nutella and pretzels, geez you’re good. period.  Dear boyfriend, I’m looking forward to spending some time with you this weekend and relaxing, I’m thinking we do a Disney themed movie night and take advantage of Hercules and that $10 zorbas giftcard!  Dear seesters, I love you both, very very much.  Thanks for putting up with me and living with me.  I’m grateful for y’all and you each get more beautiful with every passing day!  Dear Grey’s Anatomy, seriously… you had to kill off someone else, when will the tragedy stop??? I’m close to my own death just because of you!  Dear Once Upon A Time, o.m.g. if you are not the most amazing show ever created!  Ok, besides HIMYM, They are always #1, but you’re following close behind! I love it!
