*I asked Nick for a good title… That’s what I get for asking for his input on the blog! haha*
Holy Guac! I don’t know what happened to the past few days… well, that’s a lie.  I had every intent of posting at the end of July 4th to share what I did that day… that didn’t happen.  So I thought I’d post about it first thing July 5th… that didn’t happen.  Then I was gone all day July 6th… so that didn’t happen again.  And now here I am!  I thought I should probably catch you up to speed finally before I forget all the wonderful memories I’ve made!
I love blogging, but I’m learning that I love living even more and sometimes blogging takes a back seat, which is fine.  I’m living in the moment, loving every second of it, and soaking up the joys of this summer.  That literally defines the last few days of my life.
I’m going to approach this in time-line order, well because that just makes sense I guess…
{July 4th} – Happy Independence Day, my friends!
I had a very low-key 4th of July.  I just found out the night before that Nick was actually going to be in town a day sooner, so I’d have someone to celebrate with!  I imagined my July 4th being pretty lame with me drinking a few of my favorite beers, sitting on the couch watching some tv, cleaning my apartment, and attempting to make jalapeño poppers without a grill (Even if I had one, let’s be honest… I wouldn’t have a clue how to use it safely!), but dang it, I wanted some jalapeño poppers!  So swoops in Nick to save the day!  I got some good cleaning done before he arrived and I did all the shopping beforehand so when he arrived we could tackle the grilling.  We decided on some Hawaiian chicken, jalapeño poppers (of course!), and some oven-roasted veggies.  I had baked cupcakes earlier that day and decided to festively decorate with strawberries and blueberries.  They were amazing, heck, it was all amazing!

Early that day though I enjoyed the day cleaning and doing various self-rewarding things

Enjoyed my morning quiet time with peanut butter pretzels, Beth Moore, God’s word, and coffee w/ soy milk & cinnamon.

Catching up vegan living

{July 5th}
This was the perfect relaxing day! The entire day was filled with rain and thunderstorms which was the perfect excuse to spend the time packing up Nick’s apartment.  We opened up the door every now and then to watch the rain.  We enjoyed the evening watching Identity Thief and ordering a delicious pizza!
{July 6th}
The MSU VISTA’s decided to go canoeing with the Ole Miss VISTA’s so we all met in Clarksdale, MS and canoed down the Mississippi River with Quapaw Canoe Company!  It turned out to be so much fun and you never know what life may bring.  We ended up canoeing with a guy and his son who were in town from Fort Worth, TX and we all really enjoyed spending the day together!  He gave me his e-mail address so I can e-mail him my resume and if he hears of anything, he’ll pass it along!  You never know who you’re going to meet or the kind of influence you’re going to make on people.  He genuinely loved what we did as VISTA’s and showed compassion for our futures and knew that we were job hunting now.  It was such a rewarding day!  I’ll let the pictures speak for themselves now!

This is our “Charlie’s Angel” pose.  We laughed a lot over this because Lacy said that she shows off her muscles that way because she thinks it makes them look better haha, so we all did it!
Hope y’all had a wonderful Holiday weekend, I apologize for taking up such a long blog post on this update, but I enjoyed the time away from the computer, spending quality time with friends!

My wish list

1 // CamelBak Better Bottle Insulated 0.6L – I just love these water bottles.  I opted to get a nalgene for my everyday water drinking at work simply because it sits on my desk more than likely collecting dust all day and the spout on these is open to that dust, so I didn’t want to put my mouth on that.  I’d still like to get one of these though!

2 // Lean In – Brittany suggested this book to me when I shared some experiences with her about the job I’m in and I really want to read it.  It sounds like the perfect book for what I’m dealing with right now!

3 // A nice beginner photography camera – I don’t have a specific type because I haven’t really started researching it yet.  I know I don’t have the money to spend on one right now and I won’t until I get my legit big-girl job hopefully starting in August, but my sites are on a nice camera.  You photography buffs have any suggestions for a reasonably priced beginner camera for someone?!  I know absolutely NOTHING about photography, so it needs to be user-friendly.

4 // Erin Condren Life Planner [Gold] – I’m not gonna lie, I think it’s absurd that EC wanted to charge $75 for a gold life planner, but then I saw Jennifer’s and kind of fell in love.  I’m a tad bit ashamed because I still find it ridiculous, but her planner looks stinkin’ adorable and I’m starting to want one.  I still have my regular EC life planner and it lasts until December, so I’m holding on to it for another few months, but by then I may actually break down and get this.

5 // Jack Lalanne Stainless Steel Power Juicer – I recently got fed up with my crappy Walmart power juicer and threw that sucker in the trash.  Right now I don’t have a juicer and I won’t for a little while because I’d really like to save up and get a really nice one like this one!

We recently got the cutest coffee shop on Main St. in Starkville, MS called 929.  If you are a bulldog and haven’t had a chance to visit it yet, then next time you’re in town, it’s a place you MUST stop by!
I’ll mostly let these pictures do the talking because I don’t think I’ve seen such beautiful and creative interior design in my life {except on pinterest, of course}.

That cute little gold crown is their logo.  They have fabulous outside seating!

I love the butcher paper hung on the wall for their menu.

These look amazing every.day!  Before I move from Starkville, I’ll be trying one of those cinnamon rolls that are literally as large as my face!  Seriously, the picture doesn’t do their size justice!
I tried this sausage, egg, & cheese sandwich since it was dinner time and I was starving.  Unfortunately, I wasn’t impressed.  But their cakes are delicious, so I know you can still go there for some good food!
They have BINGO night every other Thursday with tons of prizes!

I saved the best for last!!! Those are cookie sheets… as their wall.  I absolutely ADORE this design!
