North Farm

Good Morning!  How was your Valentine’s Day weekend everyone?!  Mine turned out beautiful and you’ll see why shortly.

I headed up to Starkville on Friday after work and had a pretty low-key evening watching Friends, which has become a pretty typical day in my life!  I’m pretty sure this is my all-time favorite TV show that never gets old. I can play it in the background for hours & days & weeks & months… seriously, never gets old!

Saturday morning, I woke up and went to Starbucks with my sisters.  We had a few hours of conversation and of course delicious coffee!  Nick and I ordered the Engine 2 Diet book and My Beef with Meat by Rip Esselstyne, so I started reading while we were at Starbucks also.

After we finished up, I picked Nick up so we could have lunch with a good friend of mine.  We ate Mexican and I was able to meet her precious little baby boy!  He was the sweetest thing!  Pretty sure I’m in love with the 5-7 month age because I was head over heels for this little guy and I feel the exact same way with Nick’s nephew who is around that age.

After lunch we headed out to the baseball game and the weather was perfect on Saturday!  State played well and although there was another game at 4:00, we didn’t stay for the game to start.  Since Nick is doing my marathon next weekend, he wanted to go for a run, so we headed out to North Farm.  I started out running a little bit here and there, but eventually my knee gave me more trouble, so I ended up walking the rest of our time out there.  I need to go buy new shoes and see if they make a difference.  I feel like I’ve tried so many other things and I’m still stuck with this knee pain, that getting new shoes is the next step.  I’ll report back!

North Farm turned out to be absolutely beautiful on Saturday as the sun was setting!

Mississippi State University has a lot of land and we’re a big agriculture school.  We have some farm land that has a great gravel road that surrounds it.  The total circle comes close to 4 miles so you can get a fairly good run in.  As the sun was setting, I couldn’t help but snap some beautiful pictures of our Valentine’s Day activities!  Nick was running up ahead of me, so we didn’t get a picture of the two us together.

That evening, we hung out with my sister, made spaghetti, had King Cake, and watched This is Where I Leave You.  The night ended perfectly spending time with the people I love!

On Sunday morning, Nick and I headed out for Starbucks (yes, I can get obsessed on the weekends when I’m in Starkville.)  Surprisingly I watched more Friends with my sister while Nick did another run, and then before I left town, Nick and I had dinner at this local Thai restaurant!  I was really resistant to trying it, but it turned out delicious!!  I got the pineapple fried rice with tofu.

I actually hope Nick and I eat there again soon!  The atmosphere is perfect for a date night – low lighting, quiet environment, and delicious food!  I’m learning to really enjoy tofu, Thai Siam did an excellent job on the tofu portion of my meal.  I’ve had my fair share of not so great tofu from restaurants (one in particular is when I ordered tofu that came cooked with meat, WTF?) so I’m always appreciative of great tofu!

First Sub 30 5K!

Hey there!  How did y’all’s weekend turn out?  Mine went well with the exception of Mississippi State’s first loss of the season!  It was unfortunate, but both teams played fairly well.  I’d say that touchdown was questionable, but what’s done is done.

On Friday night, Nick arrived in town with my little sister.  My mom made Mexican and we all just hung out eating & chatting.  I was pretty tired already and I had a 5K planned for Saturday morning, so Nick headed home about 9:30 and I went on to bed.  My alarm went off bright & early on Saturday to get ready for my race.  I went and picked Nick up and we stopped by Chick-fil-A so he could get some breakfast and then we waited for the race to start.  My goal was to do my first sub 30 5K and much to my surprise, I DID IT!

The course was hilly.  My toes and fingers were numb for the first mile and a half.  It was a rough morning to run – so cold!  Luckily the wind wasn’t a huge issue.  I came up on the finish line and saw 29:30, so I booked it in to finish right under 30 minutes.  The second I slowed down, I dry heaved.  It was a painful race and it made me realize that I certainly don’t run in the cold enough.  I think my breathing had a hard time getting comfortable and by the time I finished, my head & chest hurt that it caused the dry heave.  After the race, Nick and I ate at Corner Bakery.  It was delicious!  I got the Farmer’s scrambler with potatoes and toast.  I ate the entire plate, plus some of Nick’s oatmeal.

When we finished up breakfast, I headed home to shower and change and then we met up with Nick’s dad to help him put in some fence posts.  I had the grueling job of running to Chick-fil-A for everyone.  They worked and I ate all the fries.  True Story.

We finally headed to the Tailgate party to watch the game.  Like I said, it was less than stellar for us Mississippi State fans so moving on….

After the game, we headed out to Primos to meet Nick’s mom and her boyfriend for dinner.  (I know, we eat a lot.)  I got the 4 veggie plate with mashed potatoes, dressing, pasta salad, & mac & cheese with a side of cornbread.  It was absolutely delicious!  Afterwards, I dropped Nick back off at his dad’s and we watched 2 episodes of Friends.  His dad is borrowing my series collection right now since he was recovering from his open-heart surgery.  He’s loving it as much as I do!

On Sunday, I spent the better part of the morning lounging around and eating cinnamon rolls with my peppermint creamer coffee.  I finally got dressed and headed out to get Nick.  We went to his Grandma’s house for lunch with his mom and her boyfriend.  His grandma just got out of the hospital for fluid buildup in her lungs and they’re running tests for some other things going on.  Hopefully they’ll figure out what it is and get her on a good treatment plan.  She’s 82 and as talkative as can be!  She still lives alone and makes her own trips to the grocery store.  We helped her bring in 4 large cases of water that we later learned she had put in her trunk all by herself.  She’s sweet and we certainly don’t get to visit with her enough.  Nick made a comment that he wishes he had stopped by to visit more often when he was going to school near where she lives.  It made me think that we all miss opportunities like that to spend time with the ones we love.  It was just a good reminder to cherish the opportunities that are presented to us to spend time with family & friends, even when it’s not so convenient.  The time we spent over there yesterday was wonderful and it was good to see her up and about.

Sadly, it was time for Nick and my sister to head home, so I finished off the weekend with some Criminal Minds & cleaning my ridiculous room.  I also did some Laundry.  Well, that’s it!   I had a nice weekend at home.

Mississippi State Football is #1

It’s about time I blogged, wouldn’t you say?

What an awesome weekend in Starkville!  In case you haven’t heard, Mississippi State University is now #1 in the nation, bet you NEVER thought you’d hear those words, I’m sure.  Mississippi tends to rank last in just about everything else, believe me, I know… but for the first time in history, we’re #1 in football!  I didn’t actually attend the game, but I watched the game from a covered tailgate so I did not get soaking wet from the torrential down pour that occurred on Saturday.  I was accompanied by some sweet friends too which was worth so much more than a $200 ticket to the actual game.  Additionally, even though I’m not an Ole Miss fan, they won against Texas A&M and are doing awesome this year also, ranked #3!  Now Mississippi needs to move up on some other rankings – we’re still working on it!

On Sunday, Nick and I had a relaxing day with Starbucks, a veggie pizza from Domino’s, and we set up some stuff in his new grad student office.  He wanted to take some of his books to reference when he’s working and make it seem as if someone actually works there because when I initially saw the space, it didn’t look like it belonged to anyone it was so bare.  We also watched an interesting movie on Netflix – Adventures in Babysitting.  It was one of those “Are you serious right now?” movies (At one point, a little girl is hanging outside a skyscraper building like it’s no big deal… Are you serious right now!? YES!)  After the movie, I headed back to Jackson.

I ordered an Erin Condren planner… I know, I’m one of those people.  I went without it this year and I was doing fine, but I still haven’t been able to find something that I enjoy using as much as the Erin Condren.  I haven’t been good at blog planning either, so I’m hoping I’ll get better with that once it arrives on the 20th!  Judge me, I don’t blame you.
