Green Smoothie Prep

I’m off in sunny Jamaica, thank goodness!! Last week was rough and I was really looking forward to this vacation, but do not fear, I have left you in some wonderful hands today!  I’m so excited about this post from Kitty @ Joel + Kitty and I love that she is another Mississippi sister!  I cannot wait (well, maybe I can) to get back from Jamaica and give this green smoothie prep a try for a quick breakfast or after work snack when I need it.

Green smoothies.

They’ve been all the rave, haven’t they? I totally get that they are full of vitamins, minerals and all the nutrients my body needs. I know that they give me the extra energy I need to chase kiddos all day. I’m even totally convinced they make me feel nourished and set the tone for a more mindful healthy day…yet, 99% of the time I am too lazy to get my blender out and care for myself…

That is, UNTIL, one Sunday evening I had a light bulb moment.

Every Sunday night I sit down for 15 minutes to Meal Plan, and often I incorporate lots of freezer meals, because, well, I love freezer cooking. I was trying to think about how to incorporate more veggies in the week, and then thought, “Why not marry freezer meals and green smoothies?” And the nourishing habit of self care also known as Sunday Night Smoothie Prep was birthed.

I mean, why lug out all the spinach, kale, berries, chia seeds, flax seed, etc. etc. multiple times per week when you can get it out once on Sunday evening, divide it all into individual bags, zip them, label them and throw them in the freezer?

Then, as you’re scrambling to get the kids to school and the last thing you’re thinking about is how to mother yourself, just pull a smoothie bag out, add some water, orange juice, and maybe even 1/2 an avocado and enjoy!

It’s like putting 20 minutes of your life on cruise control! Cheers to a new weekly ritual that boosts your energy and nourishes your body!

This week in GIF

Wow, what a week!!

It is finally Friday and that means I have finally boarded my plane to Jamaica.  If you’re reading this, then I’m already on my way!  This week has been a whirlwind, but I figured you’d enjoy a recap of my week via GIF instead of hearing me whine & complain about how stressed out I was and how thankful I am for a week long vacay.

Long week of prepping everything for my week long hiatus + experiencing my first audit at work:

The audit went well, I even got a compliment on my work that almost brought me to tears due to the sheer exhaustion of trying so hard to get it right and from caring so much.  We only had a few things we need to correct and work on for the future.  After the audit, I could focus on the work that had piled up throughout the week and I was able to get as much prepped and finished as I could before walking out of the office at 5:45pm on Thursday night.

I’ll talk to y’all next week, I have some celebrating to do!  Have a great weekend and be safe, my sweet bloggy friends!

Jamaica Packing List

Wow, what a COLD morning we are having in Mississippi!  We are actually expected to get snow today – woo hoo!  Although… I’ll still be in full swing at work, so no “snow” day for me.  Unfortunately, due to the winter weather, our first week of practice for Girls on the Run has been postponed until next week, which really sucks because I’ll be out of the country next week.  I’m sad that I won’t be able to meet my girls at their very first meeting, but I hope they have a wonderful time and I look forward to meeting them in a few weeks.

Although I’m so ready for this fantastic vacation and I can’t wait to spend quality time with my cousin, I still have so much to do – I need to schedule my blog posts for next week, make sure the Mississippi Women Bloggers website is all set-up for the week, need to do some laundry, I still have to get through the next 2 days at work (with an audit later today!), and of course… there is the packing!  Oh, the packing… I love packing, but this is my first time out of the country and although I’m sure it’s not much different, it still feels like a daunting task.  I also don’t really have time to pack until Thursday night after work, so I’ll be doing it last minute.  That’s why I decided to go ahead and create my Jamaica packing list so I have a few more days to realize if I missed anything and then it should be pretty smooth sailing on Thursday night as I pull everything together.

My cousin has been texting me all week about what she’s packing so I think between the two of us, we’ll be set for a good 7 days!!  My cousin is just like another sister and when we’re together, we have no issues sharing anything & everything so if I forgot something, I know I can count on her to let me borrow whatever that may be!  She’s also bringing all of her swimsuits so we can mix & match.  Hopefully the weather will cooperate enough for me to get on the plane and arrive safely – I’d hate for it to be delayed, but we’re flying from Jackson to Charlotte, so I know the weather will be even colder up there when we land.

Brrr (seriously, it’s so cold here!)…. okay, I’m off to work so I’m one day closer to beautiful & sunny & warm Jamaica!
