Recipe: Sweet & Spicy Pickles

So as I’ve mentioned, I’m out of town this week for work, but I’ve had some fabulous ladies guest posting on the blog this week, and this sweet Alabama lady is no different!  I met Lauren at a blate a few weeks back and I really enjoyed getting to know her that day and since through her blog!  She has this recipe for y’all today that looks amazing and I’m definitely going to have to try it myself!  Check out Lauren’s recipe and then hop on over to her blog and say hi, I know she’d appreciate it!

I wanted to share this recipe for sweet & spicy pickles with y’all because it is one of my favorites for the husband and I to do together! As we both love Wickles, we have really taken to making these as our family “gift” for holidays and housewarming presents. And it’s really quite a simple process once you get the hang of it ๐Ÿ™‚ 

Ingredients

About 10 pickling cucumbers, sliced


1/2 cup pickling salt

3 cups white vinegar

3 1/2 cups sugar

*2 tablespoons yellow mustard seeds             

*4 whole cloves

24 dried cayenne peppers  (we get ours from the mercado latino so they’re extra spicy)

2 teaspoons 100 percent Natural Pickle Crisp, optional

2 cups sliced onions

6 cups water

1 1/2 cups apple cider vinegar

10 tablespoons chopped garlic

*1/2 teaspoon turmeric

(*you can use a combined pickling spice for these 3 instead*)


Directions

1. Put the cucumbers, onions, pickling salt, and water in a large (non-reactive) bowl. 
2. Cover and let the cucumber/onion mix soak for about 2 hours. 
    3. Drain the water from the cucumber/onion mix through a colander and rinse well for 5 minutes. Drain well and set aside while you mix the remaining ingredients.
    4. Combine the vinegar’s (white & apple cider), sugar, *mustard seeds, turmeric, cloves*, garlic, and dried peppers in a medium saucepan over high heat. 
    5. Bring to a boil, reduce the heat to medium then add the cucumber/onion mix. Stir the mixture while in the pan.  Bring to a simmer and then remove the saucepan from the heat.
    6. Set up a station of the hot sterilized pint-size preserving jars & tongs near the saucepan mixture.
    *note: sterilize the jars in a hot soapy soak in the sink for about 30 mins, then place on a cookie sheet in the oven (lids & jars) to dry – about 30 mins at 200 degrees.
    7. Fill each of the jars with the pickle mixture (using a soup spoon & a wide mouth funnel if you have one), dividing them evenly, and enough of the liquid to come within 1/2-inch of the top. 
    *note: Add 1/2 teaspoon of Natural Pickle Crisp to each jar (to make more crisp if desired). 
    *note: With a clean damp towel, wipe the rim and fit with a hot lid. 
    *note: Screw on the metal ring just until the point of resistance is met. 
    8. Process the jars in a hot-water bath for 15 minutes.
      Using rubber tipped tongs, remove the jars, place on a towel, and let cool. Test the seals by allowing the jars to stand at room temperature overnight or until the lids pop. Tighten the rings and store in a cool dry place. Let the pickles age for at least 2 weeks before eating. Serve alone, on burgers, chicken salad or even cream cheese and crackers! Happy pickling! : )

      Meal Planning!

      I am currently on a work trip this week so I have some sweet friends guest posting!  Clara and I had the opportunity to meet back in February at an Alabama Blogger Meet-up and I really enjoyed getting to know her!  She is super sweet and a lot of fun! She is here to talk to y’all about meal planning today, and I know we could all use some advice in that area, myself included!  Take the time to get to know Clara and see what she has to say about making your life easier by having a meal plan!

      Hi there! I’m Clara and you can usually find me over at Walking in the Light. 

       Just a little about me –  I’m a twenty something newly wed (we hit our one year mark yesterday!!) living in Alabama. I am a stay at home wife, aunt to nine precious kiddos, love cooking, crafting and am FULL of energy!  
      Thanks a million to my sweet friend Heather for letting me come share how I make my life simpler with meal planning. 

      This topic is one that has been discussed between my friends and me on numerous occasions. I started planning out our meals and lunches months ago, and it has made life so much simpler (and less stressful). At first, I was trying to scramble around at night or after work to make packed lunches and dinner, and that got old very quickly.

      Meal planning sounds tedious, but I assure you, it makes all the difference during the week. At first, preparing my list took about an hour yet I’ve since figured out the swing of things and am much better at preparing.
      My grocery shopping day is every other Sunday – I get enough food for 2 weeks! I can’t stand the grocery store so planning meals out in advance allows me to not have to make “quick” trips during the week or fight with myself on what to cook.
      For lunchtime we used to spend loads of money eating out, but we now pack our lunches. On Sunday, right after grocery shopping, I make us both meals for the week typically leaving one open day for leftovers (or two depending on my meal plans).  I go ahead and makes all our sandwiches, snacks and pack it all in Tupperware.
      ***A good tip, place a damp paper towel over the bread or whatnot to help not dry out.***
      My suggestions:
      Gather all your recipes for the two weeks (or just a week if 2 is too much)
      Write down all ingredients needed (check your pantry and see what you already have to use)
      If you have ingredients that spoil, plan those meals earlier on in the week
      Enjoy your free time (cause now you have TONS of it)
      Check out this awesome meal planning on a budget called food on the table. Its a great way to help get that plan, list and budget going.
      Meal planning is easy and a great idea! If you put the time in up front, it will pay off in the long run and make your week easier.
