Green Smoothie Prep

I’m off in sunny Jamaica, thank goodness!! Last week was rough and I was really looking forward to this vacation, but do not fear, I have left you in some wonderful hands today!  I’m so excited about this post from Kitty @ Joel + Kitty and I love that she is another Mississippi sister!  I cannot wait (well, maybe I can) to get back from Jamaica and give this green smoothie prep a try for a quick breakfast or after work snack when I need it.

Green smoothies.

They’ve been all the rave, haven’t they? I totally get that they are full of vitamins, minerals and all the nutrients my body needs. I know that they give me the extra energy I need to chase kiddos all day. I’m even totally convinced they make me feel nourished and set the tone for a more mindful healthy day…yet, 99% of the time I am too lazy to get my blender out and care for myself…

That is, UNTIL, one Sunday evening I had a light bulb moment.

Every Sunday night I sit down for 15 minutes to Meal Plan, and often I incorporate lots of freezer meals, because, well, I love freezer cooking. I was trying to think about how to incorporate more veggies in the week, and then thought, “Why not marry freezer meals and green smoothies?” And the nourishing habit of self care also known as Sunday Night Smoothie Prep was birthed.

I mean, why lug out all the spinach, kale, berries, chia seeds, flax seed, etc. etc. multiple times per week when you can get it out once on Sunday evening, divide it all into individual bags, zip them, label them and throw them in the freezer?

Then, as you’re scrambling to get the kids to school and the last thing you’re thinking about is how to mother yourself, just pull a smoothie bag out, add some water, orange juice, and maybe even 1/2 an avocado and enjoy!

It’s like putting 20 minutes of your life on cruise control! Cheers to a new weekly ritual that boosts your energy and nourishes your body!

Calling all Guest Bloggers!

Not to be completely negative today, but we all have our failures and let me tell you – I had a big one yesterday!  Actually, not yesterday… more like the past 6 months!

Remember how I’ve been griping and complaining about my comments not working.  Basically, you lovely people would comment, but the only way I had to respond was on the blog site because I never received an e-mail with the comment so I could reply directly back to you!  It was frustrating and my dad could not figure out what the issue was.

The problem has been solved, folks!  And let me just say that I feel like an absolute idiot! haha All of your beautiful comments were going to my spam folder.  Now that I know that, my dad has fixed the issue where I’ll get to see each one of your comments pop into my inbox and I’ll be able to respond to you directly – you have a question?  It’ll get answered!  you have a suggestion? I’ll take it into consideration and let you know so!  I’m so excited to finally have this fixed and I can’t wait to get to know each of you better through the discussions we have via comments!  So comment away, my friends!

OKAY… so I’m heading off to Jamaica in TWO WEEKS!  I can’t wait to soak up the sun, enjoy a mojito on the beach, & go scuba diving for the first time!  Of course, I have many other activities planned – one of which is eating.  And eating a lot.  I also plan to do yoga on the beach (yay!) and try my hand at paddle boarding (what a workout that should be!)  One thing I do not want to neglect while I’m gone though is this here blog!

Currently

I’m not a good “just start typing & something will come to you” type of blogger… I need a plan before I set out to write.  When I have writer’s block, I just don’t write.  Today though, I’ve decided to do a “CURRENTLY” post for the first time in… ever!

Currently I’m….

Wishing: That I was back in Orlando at Disney.  That’s my always wish. haha Also, I wouldn’t say no to Starbucks, except that I have to right now because of my Engine 2 Diet.  I wish I had a Starbucks right now though, but even better.. a Starbucks at Disney!

Reading: This is Where I Leave you.  We started a book club at my office and this is the first book we decided on.  I haven’t actually started it yet, but I need to go pick it up from the library or download it to my Kindle and get to reading.  We meet in about 3 weeks to discuss, but I think we’ll decide to just watch the movie that came out last Fall.  I love Tina Fey & Jason Bateman, so I’m excited to see what humor lies within the book!

Eating: Nothing at the moment I’m typing up this post, but I have been doing the Engine 2 Diet and I’ve found some new favorites – Yellow Split Pea & Sweet Potato Soup (on the menu for lunch today), Peanut Butter Chocolate Chip Cookies (made with bananas), and the Engine 2 Wild Rice Blend is delicious in a black bean taco!  At our last meeting, we also made some hummus & a pineapple salsa that turned out heavenly!

Listening To: the heating running at my feet.  It’s a comfort thing.  I’m not technically that cold, but I enjoy the warmth my feet feel.  Also a phone ringing in our office… not my phone, but a phone somewhere.

Wearing: Black slacks, a White flowing Blouse, Maroon Beads, and Maroon Heels.  I feel all matchy and professional today.  These maroon heels are always a little snug when I put them back on, but they stretch out and end up perfectly fit by the end of the day.. when it’s time to take them off again.

Learning: Series 65 Material.  Within a year of my job, I got my Insurance License, my Series 6 Certification, and my Series 63 Certification, now it’s onto the Series 65.  The majority of you have NO clue what I’m talking about, but it makes me pretty legit at work.  Not sure what I’ll attempt next, but I really need to buckle down and finish this Series 65 test.  Not a lot of people pass on the 1st try, so I’m pretty nervous about it!

Drinking: Water.  Lots of water, yet not enough water.  I’ve also been drinking a lot of coffee w/ almond milk & cinnamon.  I haven’t had any soda’s since being on the Engine 2 Diet, but then again I didn’t really drink a lot of soda to begin with.

Watching: Grey’s Anatomy comes back tonight, YAY! I’ve also been watching a lot of Friends on Netflix.
