Health Starts Here: Week 3 Recap!

Wow, I haven’t been here in a week!  That was completely unexpected, but I have a lot of good stuff coming and I’m excited to share my re-cap from Week 3 of my Health Starts Here Challenge.

DINNER

Let me go ahead and share my dinner from tonight because it was delicious and perfectly hit the spot!

Brown Rice w/ Fiesta Brocolli, Roasted Corn, Asparagus w/ carrots, cabbage, strawberries, & cantaloupe!  It was refreshing, it was flavorful, it was everything I wanted out of my dinner tonight!  I was already at Whole Foods for our Week 4 Meet-up and it was so much fun!  I look forward to sharing that with you next week.  I can’t believe we’re almost done, we have one week to go and next Monday night will be Graduation from the Challenge!

WEEK 3 MEET-UP

Week 3 started off with an amazing speaker, Terry Sullivan, from  liveRIGHTnow in Jackson, MS!  I was so encouraged by listening to someone who sees the need & importance of bringing fitness to Mississippi, but who also believes there is hope for our state to improve! His website provides information on a lot of fitness events throughout central Mississippi and I’m especially looking forward to their Java Run on Wednesday mornings.  With my work schedule, I’m not sure how I’ll pull it off yet, but I’m determined to make it to at least one morning jog with free coffee & community!

Now, lets dive in to what Terry taught us!

The first question he asked was “What does it mean to be fit?”  He broke the answer into 4 categories: How you measure up (BMI, Bodyfat %, HR, Cholesterol), How you feel physically (energy, strength), How you feel mentally (stress, sleep, happiness), and How sustainable your fit lifestyle is (short term vs. long term).  Every one of these answers gives YOU and everyone around you a reason to live a healthy lifestyle!

Sadly, Mississippi ranks 50th in overall health, heart related death, & high cholesterol.  Mississippi ranks 49th in cancer deaths, obesity, and diabetes.  These numbers motivate me to a healthier lifestyle and they motivate me to share my love & desire for health with others!  All of these statistics can be changed and that provides me with hope that one day Mississippi will not be last!   I love what he said, “We can be victims or we can be part of the solution” and I seriously want to be part of the solution!

He encouraged us to workout a minimum of 3 hours per week and gave us countless options to do it!  Another favorite quote, “Options = not excuses.”

Throughout his session, we didn’t necessarily learn the ins and outs of fitness and the proper moves & techniques, but it was a huge motivator to incorporate exercise into the diet we’re already doing!  He said that 80% of your healthy lifestyle should be what you put in your body, the other 20% should be exercise.

I’m so excited to join some of the group runs & events they have going on at liveRIGHTnow!

MY WEEK AT A GLANCE

Again, my work week went smooth!  I made a mistake once mid-week, but other than that, it was great!  My weekend was one to be ashamed of though and I’m sad to say it.  I was in Starkville with Nick for the weekend and we ate out a good bit.  As I mentioned in my last post, I’m determined to get one full week (including a weekend) where I firmly stick to the challenge and I believe this coming week is it!  I’ll be home, Nick’s staying in Starkville, and I’m going to make all of my meals at home.

This week on the menu:

  • Brown Rice w/ Veggies
  • Quick & Easy Veggie Chili
  • Whole Wheat Cornbread Muffins

Those are the only “meals” I’m making, but I just picked up some cereal & ezekial english muffins for breakfast.  I also bought some salad & veggies to munch on throughout the week.

I’ve already decided to stick similarly to this diet once the challenge is over.  Reducing the amount of dairy I’m having is making major strides in my daily life!  Although I’ve had cheated on the weekends, I’ve still felt great so I think sticking to this plan moving forward will work great for my lifestyle as long as I don’t overdo it too much on the weekends.

Mary Lindsey has been so great about bringing us recipes at each meet-up and I have so many awesome ones to try!  Can’t wait to share how they turn out!

Dragon Blood

Good Morning!

This week has definitely flown by for me and I’m excited it’s time for the weekend.  Nick will be coming home, his brother & sister-in-law will be in town for their baby shower, and in the midst of all the family fun I’ll be studying hard for my Series 6 test.  I have a very strict study schedule and I’m already a little behind.  Hopefully today will be slow at work like it usually is on a Friday and I can catch up.  I haven’t juiced recently, so I thought juicing would be great this week to help get me through some of my meals for the Health Starts Here Challenge!

The Eye Opener

I chose these 2 juices to make this week because they both contained only 3 ingredients and after buying my first car, I’m trying to live on the cheap!  The Dragon’s blood helps with energy and the Eye Opener helps with digestion.  I was nervous I wouldn’t like the Eye Opener because it has 14 carrots in it and I’m not the biggest carrot fan, but it surprised me!  The apples helped sweeten it up a good bit.  I had the Dragon’s Blood for dinner last night with a salad and the Eye Opener for breakfast this morning.  I’ll be using my left over 4 for 4 deal in a wrap today at lunch.

Yesterday I handled a lot of adult tasks that come with buying a car.  I purchased my own insurance and my car tag.  I think this week has flown by because I’ve been so busy with random stuff throughout the week that I just have to get done.  I’m excited to take a breather tonight and enjoy time with Nick and some friends.  This whole car buying process has been overwhelming, but I’ve learned a lot throughout the experience and I’ll be making a post next week to help young first time car buyers like myself.

BIG BROTHER

If you watch Big Brother and you’re not caught up yet – you should end the post here so I don’t spoil it for you!

I just finished watching the double eviction episode and I’m so disappointed in how things turned out!  Zack should have definitely gone home.  Hayden and Nicole were completely blind-sided and honestly, I’m sad that her and Christine are at odds now.  I thought they were a perfect pair and could have taken each other to the end with how well they know the game.  I’m sorry, but in my opinion, Christine pulled the first trigger on that one by trying to get Nicole and Hayden against each other.  I’m not sure why she didn’t consider Hayden part of her team because he definitely was until all of that unfolded.  Things just spiraled from there.  I really like Derek and Cody, but I hate that they went against Nicole and Hayden.  The group that is in power right now…. I just don’t like it.  They include people I wish it didn’t include and exclude people I wish it would include.  I just hope Hayden gets back in the house!  Hopefully Nicole doesn’t go home next.    I was baffled by everything that happened because it happened so quickly!!

Date Night: Embarrassing Moment!

Good Morning!

I am back from my weekend in Starkville and I’m already missing it – well, I’m missing Nick – not necessarily Starkville.  We had a great weekend that started off with my most embarrassing moment ever.

WEEKEND RE-CAP

We had planned on “date night” for Friday night as my award for completing the 21 day workout challenge (Workout for 21 days straight!)  We had decided on the Veranda and I was already looking forward to the Harvest Risotto I was going to try.  Well I bought some new shoes this past week for the occasion and as I mentioned before, I’d been looking for some wedges similar to what I borrowed from my cousin in Texas.  I thought I found the most perfect pair of wedges and they were super cute!  We get out of the car to go eat and I was just standing by the car waiting on Nick.  Then it happened, I had the most ridiculous slow fall of my entire life (in a dress).   I kept trying to catch myself, so it delayed the actual fall, but basically… these shoes are the devil and I’m returning them immediately!  I couldn’t help but laugh at myself.  Nick had to pull me off the asphalt.  There was zero arch support, I was getting blisters, if the pavement wasn’t 100% even, there was no telling if I’d fall on my butt again.  It also felt like my skin was splitting from the way my foot fell in the shoe when I walked.  It was awful.  The rest of the night was amazing though.  I may have indulged this weekend a little too much since I knew my 28 day Whole Foods challenge was right around the corner.

We started dinner off with Fried Green Tomatoes.  I absolutely LOVE these, probably more for the dipping sauce and not the actual tomatoes.

I then chose the Gorgonzola salad with my meal and it was perfect.  I love the piece of cheese toast that they bring with your salad.

Nick got the Kobe Burger and I got the Harvest Risotto.  We both really enjoyed our meals and left with a small doggy bag.  Since this was my “award” dinner, Nick allowed me to have the Peanut Butter Pie that was their special for the evening!  To be honest, it wasn’t as good as my Peanut Butter Pie.  Now I’m realizing that I forgot my left over Peanut Butter Pie in Starkville.  Really sad.

After dinner, we went and saw Hercules.  The movie was a lot better than I expected and I was really impressed with “The Rock”.  I’m glad we chose to see that Friday night.

Saturday we ended up helping my sister’s boyfriend move out of his apartment.  Nick was kind enough to volunteer us for the job, but we got free pizza & beer at the end of the day, so I’d say it was worth the time and effort.  We also had lunch with my friend Lacy on Saturday and Sunday.  She’s officially moving up North tomorrow, so I’m glad I got to see her this weekend.

HEALTH STARTS HERE

My Health Starts Here 28 day challenge with Whole Foods starts today.  I did a lot of prep when I got back to town.  I went grocery shopping to pick up some basics.  I soaked some pinto beans over night and they’re in the crock pot all day to cook.  I also bought ingredients to make Whole Wheat Cornbread so I’ll let y’all know how that turns out!  I love pinto beans & cornbread as a meal.  I cooked up some rice to keep on hand and plan on having lots of rice & bean bowl combinations for lunch throughout the week.  Our first weekly meeting is tonight and we’ll be learning about restocking our pantry and building our plates around nutrient dense food.  I’ll take notes on what I think y’all might be interested in.

MARATHON-TRAINING

Well, it’s about time that I actually do a marathon.  Nick and I have talked about doing the MS Blues Marathon and I think this will be the year.  We wanted to do the Disney Marathon, but we didn’t want to take off work that long and it was going to be pretty expensive.  One day, we’ll do that one.  I’m starting out with half-training and then I’ll continue on to train for the full.  I purchased a Trigger Point Foam Roller to help in my training.  These things are amazing at loosening up sore muscles & joints.  I’ve wanted one for a long time and I think it’s going to make a huge difference in my recovery throughout training.  My cross-training and healthy eating should also have a positive impact on my marathon training.  I’m excited to see how it goes!
