Let’s start Juicing!

I have recently become a HUGE fan of juicing!  Right now I have a dinky little juicer, but it works for me.  I hope to upgrade soon though so juicing doesn’t seem like such a chore.  To make 2 good juices, I usually spend about an hour cutting up and juicing and cleaning up.  The results though are amazing!  I try to make 2-3 juices a week now, sometimes I’m not able to, but when I am, I feel the huge rewards of juicing throughout the week!  I wanted to share with you my 3 favorite juicing recipes right now and a website that has helped me see the benefits of the juices I make and they have some amazing recipes!
Here is my favorite juicing website I’ve found so far: Juice Recipes
It tells you the benefits that each juice has and how great the benefit is!  It also mentions the health conditions that it cures.  Just in case you’re new to juicing… be sure to STIR your juice after it’s made, that gets all the ingredients binded together well.  You’ll also want to re-stir if you refrigerate it for a period of time.
Mean Green
Benefits: Weight Loss, Lower Blood Pressure, Cataracts Prevention, Asthma Help, Breast Cancer Prevention, Liver Cancer Prevention, Alzheimer’s Prevention, Lower Cholesterol, Bone Protection, Digestion, Cancer Prevention, Increased Blood Circulation, Improved Complexion, Lung Cancer Prevention, Immune System, Heart Disease Prevention, Reduce Inflamation
Recipe:
2 Medium Granny Smith Apples
4 stalks of Celery
1 Cucumber
1 thumb of ginger (be careful with ginger, it’s strong!)
6 leafs of kale
1/2 a lemon, peeled
This recipe doesn’t taste the greatest at first, but I promise it grows on you.  I personally enjoy all of my juices very cold, so I add some ice cubes to mine and it helps water it down a bit.  I’ll usually drink half of what this makes for dinner one night and save the rest for breakfast the next morning and by breakfast, it doesn’t taste bad AT ALL!  This recipe has definitely grown on me, but it caught my attention when it said it helped with weight loss… so I suffered through at first, but now I actually enjoy it!  This juice also mentioned that it helps cure hangovers *FYI* 😉
Beginner Green (DELICIOUS!)
Benefits: Liver Cancer Prevention, Breast Cancer Prevention, Bone Protection, Asthma Help, Alzheimer’s Prevention, Colon Cancer Prevention, Weight Loss, Digestion, Lower Cholesterol, Lung Cancer Prevention, Lower Blood Pressure, Reduce Inflammation, Cancer Prevention, Blood Cleanse, Macular Degeneration Prevention, Increased Blood Circulation, Improved Complextion
Recipe:
3 medium apples (I do a mixture of granny smith and red)
4 stalks of celery
1/4 thumb of ginger
1/2 lemon with rind
1 large orange peeled
5 cups of spinach
This recipe is absolutely DELICIOUS! I completely gobbled this up, which is why it’s probably beginner green because it was a great start to my juicing habit!  This one is also a great cure for a hangover (this is what the website says, not from personal experience… please don’t think I’m an alcoholic!)  It says it’s also great for depression!
Green Lemonade
Benefits: Weight Loss, Colon Cancer Prevention, Breast Cancer Prevention, Asthma Help, Liver Cancer Prevention, Alzheimer’s Prevention, Lower Blood Pressure, Bone Protection, Digestion, Lower Cholesterol, Improved Complexion, Lung Cancer Prevention, Cataracts Prevension, Cancer Prevention, Immune System, Heart Disease Prevention, Reduce Inflammation, Blood Cleanse, Macular Degeneration Prevention
Recipe:
2 medium apples
1 cucumber
4 leafs of kale
1 lemon
2 cups of spinach
This is another delicious juice!  This one also helps a good bit with depression.
These are my favorite juices right now, but I definitely haven’t experimented with all the juices on this site!  I love using this site for my juicing recipes because it shows me exactly what I’m getting when I juice!  I hope you’ll decide to pick up juicing!  You can start by purchasing a small inexpensive juicer at walmart just to experiment with it and if/when it becomes a larger part of your life, you can invest in a better juicer!

Grilling with a Twist: Easy Weeknight Recipes

 

If you haven’t used your grill yet this year, now is the time to do so. When it’s nice enough to break out the sundresses and shorts, it’s definitely time to eat long, leisurely dinners outdoors. Grilling doesn’t only make food taste incredibly delicious, but it’s a quick, generally healthy way to enjoy your favorite easy recipes for dinner. Marinades don’t typically call for heavy cream or loads of butter; the grill adds plenty of flavor on its own, making grilling a cooking technique with a lot of healthy potential.
Where nutrition can get tricky, however, is when you load up on nothing but cheeseburgers and hot dogs all summer long. It’s completely fine to indulge in a beefy burger every so often, but if you’re going to be grilling all summer, red meat and carb-loaded buns may not make your body thank you in the long run.
Luckily, there are dozens of easy grilling recipes out there that are a little on the lighter side. This summer, alternate your burgers and hot dogs with lighter proteins such as grilled chicken, turkey burgers, or veggie burgers and hot dogs. You can even grill tofu—marinate it in the fridge overnight for great flavor.

The first recipe below is for Veggie Burger Pitas, and it’s a yummy way to put a lighter, vegetarian twist on your grilling this season. It uses whole grain pita for fiber, tomatoes, chilies and onion for a slight kick, and black bean veggie burgers for a delicious meatless option.
Veggie Burger Pitas

Veggie Burger Pitas

Serves: 4 (2 filled pita pockets each)

Ingredients:

1 10 oz. can Ro*TelÂŽ Original Diced Tomatoes & Green Chilies, drained well

3 tablespoons finely chopped red onion

Âź cup sour cream (use Greek yogurt for a healthier version)

Âź cup light ranch dressing

1 12 oz. package frozen Lightlife™ Kick’n Black Bean Veggie Burgers

4whole wheat pita pocket breads (6 ½ inch), cut in half and warmed

8 small romaine lettuce leaves

Combine drained tomatoes and red onion in a small bowl. Stir together sour cream and ranch dressing in another small bowl; set aside.

Prepare burgers according to package microwave directions or grill for 5 minutes on each side (until heated through). Spread sour cream mixture inside each pocket. Add lettuce and 1 half burger patty to each pocket; top with tomato mixture. Serve immediately.

Another delicious grilling option for this summer is seafood, and lots of it. Many people get intimidated by the thought of cooking fish, (it might seem too “fancy” for a weeknight dinner, or maybe the thought of dealing with raw fish is slightly scary!) but if you can cook a chicken breast, you can certainly cook yourself a delicious seafood dinner.
It’s easy to marinade fish fillets in soy sauce and spices for a few hours or simply brush them with olive oil before you slap them on the grill, but don’t be afraid to get creative with your grilling either! This recipe for grilled shrimp tacos takes easy grilled shrimp up a notch by adding a little spice and a fresh, zesty salsa. Tacos aren’t just an indoor dinner anymore—try them out on your grill ASAP! You’ll be glad you did.
Grilled Shrimp Tacos

Grilled Shrimp Tacos

Serves: 4 (2 tacos each)
Ingredients:
PAMÂŽ Grilling Spray
1 large avocado, pitted, peeled, diced
1 can (10 oz. each) Ro*TelÂŽ Original Diced Tomatoes & Green Chilies, drained
1/2 cup frozen whole kernel corn, thawed
1/4 cup chopped red onion
1/4 teaspoon salt
1 pound peeled and deveined large shrimp (31/40) with tail, thawed if frozen
1 tablespoon Pure WessonÂŽ Canola Oil
1/2 teaspoon chili powder
8 white corn tortillas (6 inch), warmed

Spray the cold grate of a gas grill with grilling spray. Preheat grill to medium heat. Meanwhile, toss together avocado, drained tomatoes, corn, onion and salt in a medium bowl; set aside.

Remove tails from shrimp; toss with oil and chili powder in a large bowl. Thread shrimp evenly onto metal skewers; grill 2 to 3 minutes on each side or just until shrimp turn pink.

Divide shrimp evenly between tortillas. Top each with about Âź cup avocado mixture. Serve immediately.

Apple Cinnamon Pancakes {Vegan}

I recently discovered the most amazing pancake recipe and it’s 100% vegan!  I’ve mentioned before that I absolutely love this vegan cookbook called Vegan Cooking for Carnivores by Roberto Martin.  I made his vegan buckwheat pancakes last week and fell in love! I decided that this girl would no longer be making non-vegan pancakes.  I froze the leftover batter and later in the week made those same pancakes for a vegetarian friend and she loved them!  It was during that visit that she began contemplating going vegan.

I recently received my first VoxBox from Influenster and got a box of 100% natural organic monk fruit sweetener.  On Nectresse’s website, they have a recipe for some apple cinnamon pancakes!  I decided I would take their delicious recipe and put a vegan spin on it and it was a huge success!  Again, I froze the remainder of the batter and that’ll make it easy to whip up some over the weekend.

Ingredients:
1 cup Buckwheat flour
1 cup Organic, unbleached, all purpose flour
1 tbsp. + 1tsp. Baking Powder
2 1/2 cups Non-dairy Milk
1 tbsp. Agave Nectar
3 packets Nectresse No-calorie Sweetener
1 tsp. Cinnamon
1/2 tsp. Salt
4 tbsp. (1/2 stick) (1/4 cup) vegan butter, melted
1 tsp. Vanilla Extract
1 cup Chopped Apple
Non-stick Cooking spray
Directions:
Combine Flours and Baking Soda.
Whisk in Milk, Agave Nectar, Nectresse, Cinnamon, Salt, Butter, and Vanilla
Stir in Apples
Spray non-stick spray to your skillet and flip pancake after batter bubbles.
Serve with vegan butter and maple syrup.
I like to add some jam to mine (You see Raspberry above)
