Baby it’s cold outside!

Brr… Winter has finally hit Mississippi!  I went to Java Jog yesterday morning and it was one of our very first cold runs.  Thankfully I just got some leggings in that I wanted to try out.  They worked great and I look forward to wearing them this Saturday at my 5K.  I gave myself a sub 30 goal for the 5K because I’ve always wanted to do one that fast and just haven’t yet.  Granted, I haven’t done a lot of 5K’s the past few years since I’ve been running more heavily, but I still consider myself a very slow runner and my motto is usually “Slow and steady wins (or at least finishes) the race!”  I know sub 30 would be awesome to do though, so let’s hope I can pull it off.  For Java Jog, I met up with my usual running partner, Louise.  Her husband is the Marketing Leader at our local Whole Foods.  After running into Mary Lindsey the other night at Lucky Town Brewery, she decided to give Java Jog a try as well.  I finally feel like I’m finding my running buddies in Jackson.  I’ve had some great ones in the past, but it doesn’t always last long because of people moving or getting too busy to keep it up.  Mary Lindsey offered to run with me during my marathon training and all 3 of us stayed together throughout the run yesterday morning.  They’re the perfect pace for me – slow enough for me to keep up, but fast enough to keep me challenged.

After my run, I got my free coffee & I had a smoothie waiting for me in the car.  This smoothie is delicious and it has some great fruit & veggies.  One tip I learned from this recipe is to blend up your spinach first and then you won’t have an issue of your blender getting clogged.  Sometimes I get smoothie happy and throw a ton of stuff in the blender without realizing how it will all mix together and that I should have blended part of it beforehand.  I blended 2 cups of spinach with water, then added 2 bananas, pineapple, and mango.  It makes one large smoothie, but this was the perfect post-run treat on my way to work.

WEEKLY MENU

This week’s menu has been pretty good.  I’ve been trying to cook more of my Health Starts Here approved dishes and not eat out so much.  So far I’ve made vegetarian chili (still have some leftover), pad thai (didn’t turn out as good as I expected, but I’ll have to work on the recipe some), morning glory muffins (which have been a lifesaver in the morning and for snacking), the beginner green smoothies (pictured above), and I have plans to make a hummingbird cake on Friday.  I meant to make the cake earlier in the week, but just never got around to it.  Yesterday I did have lunch with my boss’ wife since he’s out of town the rest of the week and I’m having lunch with a friend today who is leaving for China next week to do missions for a year or so, but other than that, I’ve been very devoted to eating at home and eating healthy.

MARATHON TRAINING

Training isn’t going stellar, I’ll be honest, but it’s going….  On Monday, I did a 3 mile run on the treadmill at the gym.  On Tuesday, I did my favorite HIIT class.  On Wednesday, I did the java Jog which on my training is suppose to be 4 miles, but we did right under 3.  Today, I’m suppose to do 3 miles, but depending on how I feel, I may go for 4 since I missed that yesterday.  Friday I’ll rest to get ready for my long run on Saturday which is just 6 miles.  I have a 5K to get me through the first 3 and then I’ll probably go and do the course one more time to get through my second 3.  Overall, it’s going okay, but I have a lot of room to improve!  I need to better plan my eating schedule so I can be properly fueled for when I do my runs.  I also might talk to my boss once I get into longer runs about switching up my schedule some so I can either come in early and leave early or come in late and leave late so I have more time to get my longer runs in during the week.  Honestly, I’m not sure how he’ll take it, but I might as well give it a try.

Health Starts Here: Week 3 Recap!

Wow, I haven’t been here in a week!  That was completely unexpected, but I have a lot of good stuff coming and I’m excited to share my re-cap from Week 3 of my Health Starts Here Challenge.

Let me go ahead and share my dinner from tonight because it was delicious and perfectly hit the spot!

Brown Rice w/ Fiesta Brocolli, Roasted Corn, Asparagus w/ carrots, cabbage, strawberries, & cantaloupe!  It was refreshing, it was flavorful, it was everything I wanted out of my dinner tonight!  I was already at Whole Foods for our Week 4 Meet-up and it was so much fun!  I look forward to sharing that with you next week.  I can’t believe we’re almost done, we have one week to go and next Monday night will be Graduation from the Challenge!

WEEK 3 MEET-UP

Week 3 started off with an amazing speaker, Terry Sullivan, from  liveRIGHTnow in Jackson, MS!  I was so encouraged by listening to someone who sees the need & importance of bringing fitness to Mississippi, but who also believes there is hope for our state to improve! His website provides information on a lot of fitness events throughout central Mississippi and I’m especially looking forward to their Java Run on Wednesday mornings.  With my work schedule, I’m not sure how I’ll pull it off yet, but I’m determined to make it to at least one morning jog with free coffee & community!

Now, lets dive in to what Terry taught us!

The first question he asked was “What does it mean to be fit?”  He broke the answer into 4 categories: How you measure up (BMI, Bodyfat %, HR, Cholesterol), How you feel physically (energy, strength), How you feel mentally (stress, sleep, happiness), and How sustainable your fit lifestyle is (short term vs. long term).  Every one of these answers gives YOU and everyone around you a reason to live a healthy lifestyle!

Sadly, Mississippi ranks 50th in overall health, heart related death, & high cholesterol.  Mississippi ranks 49th in cancer deaths, obesity, and diabetes.  These numbers motivate me to a healthier lifestyle and they motivate me to share my love & desire for health with others!  All of these statistics can be changed and that provides me with hope that one day Mississippi will not be last!   I love what he said, “We can be victims or we can be part of the solution” and I seriously want to be part of the solution!

He encouraged us to workout a minimum of 3 hours per week and gave us countless options to do it!  Another favorite quote, “Options = not excuses.”

Throughout his session, we didn’t necessarily learn the ins and outs of fitness and the proper moves & techniques, but it was a huge motivator to incorporate exercise into the diet we’re already doing!  He said that 80% of your healthy lifestyle should be what you put in your body, the other 20% should be exercise.

I’m so excited to join some of the group runs & events they have going on at liveRIGHTnow!

MY WEEK AT A GLANCE

Again, my work week went smooth!  I made a mistake once mid-week, but other than that, it was great!  My weekend was one to be ashamed of though and I’m sad to say it.  I was in Starkville with Nick for the weekend and we ate out a good bit.  As I mentioned in my last post, I’m determined to get one full week (including a weekend) where I firmly stick to the challenge and I believe this coming week is it!  I’ll be home, Nick’s staying in Starkville, and I’m going to make all of my meals at home.

This week on the menu:

  • Brown Rice w/ Veggies
  • Quick & Easy Veggie Chili
  • Whole Wheat Cornbread Muffins

Those are the only “meals” I’m making, but I just picked up some cereal & ezekial english muffins for breakfast.  I also bought some salad & veggies to munch on throughout the week.

I’ve already decided to stick similarly to this diet once the challenge is over.  Reducing the amount of dairy I’m having is making major strides in my daily life!  Although I’ve had cheated on the weekends, I’ve still felt great so I think sticking to this plan moving forward will work great for my lifestyle as long as I don’t overdo it too much on the weekends.

Mary Lindsey has been so great about bringing us recipes at each meet-up and I have so many awesome ones to try!  Can’t wait to share how they turn out!

Pool Ready in a Jiffy

Good Morning!

That’s not a great sign, is it?  Apparently I ran over whatever the heck that thing is on my way home from work yesterday.  Luckily I noticed it before heading to church last night.  I was pulling out of my drive way, but felt like my front tire might be flat, so I got out and looked, but it was fine.  I went ahead and looked at all of them and sure enough my back tire was flat.

I went ahead and made an appointment last night so I could get my car in quickly this morning.  Thankfully my boss has been out of town these past few days and so I’m not extremely busy at work or I’d be a wreck right now.  I was caught up on everything when I left work yesterday.

What’s really funny is I’m picking my friend Lacy up from the airport today and she said her plane was delayed due to a flat tire also!  We’re all having tire trouble apparently.

It’s a dreary day here in Mississippi.  In a weird way, I love days like this.  I would love a day like this more if I could curl up on the couch reading blog posts and updating my own blog.  What’s your weather looking like?

I’ll be visiting my cousin in a week & a half.  The excitement is overwhelming.  My friend Lacy is joining me and then we’ll be greeted by our friend Noelle who just accepted a job in Texas! I plan on parking myself by the pool pretty much all weekend.  In order to do that though, I need to ramp up my workouts.  I did the 30 day squat challenge a few months ago and saw a lot of improvement with that so I’m going to start that again today.  I also need to take all the ab classes offered at my gym between now and then!

Some other necessities to get pool ready in a jiffy:

  • Drink lots of water!
  • Cut back on my Sodium intake!
  • Apply Jergens Firming Lotion

Besides spending the greatest quality time in the world with my sweet Cousin and her beyond wonderful family, I’ll also be attending the Houston Veg Fest!  I probably won’t attend the entire day, but I’ll be there for a few hours learning about vegans/vegetarians, listening to speakers, and trying products!  You’ll for sure see a re-cap on the blog!

Did I mention that Nick and I want to do the Goofy Challenge?  It’s at Walt Disney World and it’s a Half-Marathon on Saturday, Full-Marathon on Sunday.  The problem is, I’ve never done a marathon.  I’ve done a hand-full of Half’s though.  We haven’t signed up yet because it’s not full and I’d like to see how I feel in a few months.  To kick off our training, we’re doing a Half in Starkville on October 18th.  When I trained for the Disney Wine & Dine Half-Marathon, I planned on using this great training plan I found that was created by (or for) Ellie Goulding.  The training didn’t go so great, the longest I ended up running was about 8 miles and I didn’t have a gym membership so rainy days were a problem and I also didn’t have a good yoga class to go to or a decent DVD / floor space for my yoga.  I still believe the training plan is one of the best I’ve seen because of the heavy amount of x-training and strength training involved as well as yoga.  I’m giving it a try again for this training and I feel it’s going to flow more smoothly now that I have a gym membership with yoga classes offered and a rainy day option on longer runs that are critical to my training!
