Healthy Holiday Cooking Class

Good Morning friends and Happy Friday before Thanksgiving!! I’m sure a lot of you are getting ready to go out of town – I know I am!  Nick and I will be heading to Gainesville next week and of course, we’ll find ourselves at our beloved Disney World for a day!  Unfortunately, my posts are going to continue being spread out because I don’t have a working laptop at the moment and although I have my personal desktop to work on, it’s not always as convenient.  Until I decide on a new laptop though, I’ll try to keep y’all as up to date as I can!

This week has been busy with personal & work stuff!  I’ve had something to do every single night and my boss’ computer died on him this week, so it’s been hectic!  I certainly don’t mind staying busy, but it keeps me from doing other things I enjoy (such as blogging!)  Wednesday was a really long day, but it was probably my favorite day of the week!  Wednesday morning I met up again for Java Jog and it was a blast, per usual.  I love running with Louise and Mary Lindsey, they’re at my ideal pace and they’re always a joy to be around.

I headed off to work after I got my delicious free coffee and worked from 7:30-5.  There was a ribbon cutting that I attended at 4, so it lasted past my normal 4:30.  After the ribbon cutting, I had some time to kill, so I went to a friends new apartment to check it out.  Ended up spending a little more time there than I expected, but I finally made my way to the Healthy Holiday Cooking Class that I had been looking forward to! Everything was absolutely delicious and I cannot wait to make these at home.

This cranberry salsa was ON POINT.  It had the perfect spiciness and  consistency.  I can’t wait to try this at home.  I’m pretty sure Nick’s going to LOVE this recipe, possibly more than our usual Avocado Salsa.  I look forward to trying it out on him and getting an honest opinion.

Banana Nice Cream is a big deal on the Health Starts Here Challenge because it’s simple, delicious, and perfectly represents ice cream without the added dairy and calories.  Mary Lindsey went creative and made a Pumpkin Nice Cream with an added Gingersnap cookie.  The combination was beautiful and really satisfied my taste buds.

Then came the stuffin muffins which can be made with vegetable broth instead of the usual chicken broth, but Mary Lindsey suggested that you add more of the fresh herbs and spices because you’ll lose some of the seasoning with that route.  Covering the stuffin muffins was a pomegranate reduction sauce that was to die for!   I love pomegranates and she taught us a different way of cutting them than I’m use to.  Instead of the typical fattening (but delicious, I’ll say!) green bean casserole, she made a Balsamic Green Beans with Shallots recipe was wonderful.  I wouldn’t say that I necessarily enjoyed it as much as the fattening and creamy green bean casserole that I’m use to, but it’s definitely delicious enough to make the switch more times than not.  I think those green beans would also be the perfect side to an at home date night dish.

Quarterly Girls Event–Wine & Cheese

Good morning!  Hope you’re having a good week.  We made it through Monday, so it can’t be all bad! 🙂 I’m excited to share about a fun gathering I attended over the weekend – somewhat of a weekend re-cap, I guess.

The girls in our office started doing a quarterly event.  The first one was a painting class at Easely Amused.  This past weekend we did a Wine & Cheese day.  We each brought a bottle of wine and Tina had a beautiful spread of cheeses, crackers, cookies, and dips.  We all gathered around to taste wines and pair them with various appetizers.  The conversation went anywhere from work to personal to past stories.  It started out as a girls event, but Tina’s married to our Managing Partner, so we popped in for a bit and then another guy in our office was out golfing near their house, so he stopped by for some free food.

This was the craziest drink… it was purple and sparkly.  I mixed it with the Riesling I brought and it was delicious!

I’m so thankful for the girls I work with in my office.  We don’t have any catty people to deal with and we all get along really well.  I’m excited that we’ve started this tradition of quarterly get together’s to spend some time outside of the office laughing and getting to know each other on a more personal level.  Everyone has a fun and different personality, it’s been nice seeing that come out at these gatherings.

October Bliss- All about Food

Happy last Wednesday of October!  Seriously… this year has disappeared.  Can you believe we’re a few days from November?

Here we are for another month of Bliss with me and my sweet friend Meg.  Bliss is a monthly link-up for us to share our favorite things from the month!  Due to my previous blunder with my iphone, I’m sort of sharing some things from the past 2 months because I finally have pictures!

  • Hummus Chips

I picked these up randomly at TJ Maxx one day and I’m so glad I did!  These remind me of bugles, but lighter and tastier.  I ate the entire bag within a day and I can’t wait to get my hands on another!  They provide the crispiness & tastiness of chips, but I feel healthier knowing that they’re made out of chickpeas.

  • Healthy Choice Café Steamers

Would you believe me if I told you this was $2.00?  Well possibly because it’s just a cheap frozen meal, but I was extremely impressed with the value of this frozen meal.  I don’t suggest you eat frozen entrée’s for lunch every day, but if you’re busy and can’t pack a decent lunch every now and then, these Healthy Choice Steamers are the way to go!  For only $2 you get a delicious meal that I wouldn’t consider the most unhealthy frozen meal you could choose.

  • Hot Chips

Clearly I’m all about food right now.  I literally ate an entire bag of these in one sitting with the largest glass of water I could find.  I can’t handle hot too well, but I sure do love the flavor of it!

  • Happy Hour

Who doesn’t love a good happy hour?  A co-worker and I headed up to Applebee’s about 2 Friday’s ago for drinks & appetizers.  We ordered the mozzarella sticks and pretzel sticks.  Everything was delicious and we spent an or two  laughing and talking about work.

  • Quality Time with Nick

Last time I was in Starkville, Nick and I had some frozen yogurt before I left.  They have a connect four game at our local fro-yo place and so Nick and I played a few rounds.  It was a fun and relaxing way to end our weekend together.
