The terrible awful day + A Marathon Training Update!

Howdy!  We have finally hit Thursday and can I just say… man am I ready for Friday!  This week has beaten me down, y’all!

Today I’ll be giving you a quick marathon training update, but first let’s talk about my breakfast this morning & what the past few days have looked like.  Breakfast was a slice of cinnamon raisin ezekial bread + peanut butter, a grapefruit (only half pictured), and a warm cup of coffee with almond milk & cinnamon.  I’m sure plenty of you are freezing your legs off up North, but I must say IT’S COLD IN THE SOUTH!  The past few weeks have been brutal!

I’ve been on the Engine 2 Diet for 3 total days now and today is my fourth.  I think I came in expecting that this diet would make everything right with the world quickly – that was not the case for me.  It seems to have worked for our wonderful Healthy Eating Specialist, Mary Lindsey, though haha because she was a ball full of energy at our morning run yesterday!  My story has not been the same.  I have felt bogged down at work this week, it’s a combination of a lot of things I believe, but I came in Monday feeling like I was in control and by the time I left, I felt like I had zero control over every item on my desk!  I kept thinking I’d catch up Tuesday… I’d catch up Wednesday… well dang it, I better catch up today!  I can’t keep up like this!  There is no telling what I’ve forgotten to do in the past 3 days – I’m sure I’ll find out soon enough when bombs start exploding in the office.  Needless to say, who has two thumbs and is ready for the weekend?  THIS GIRL.

One piece of the very large bad day puzzle was my food yesterday.  Breakfast and Lunch both kind of failed on me.  I made oatmeal, it turned out gross.  I made a potato, I overcooked it in the microwave and it was no good.  On top of my lack of food and my craziness at work (including a break down of tears at my desk), let’s add some fuel to the fire…..

My morning Java Jog run.  It’s supposed to be the highlight of my week.  I get to see 2 sweet friends who are constantly fun & encouraging to be around and I get a free cup of coffee!  Well I had gone to the Chiropractor the day before and he asked me to continue with my normal schedule so we could see what issues I was having, so I joined in on Java Jog after missing a few weeks.  Started out okay, but by the end I was walking and in so much pain.  To top it off, my knee and leg hurt pretty much the rest of the day.  This leads me to my marathon training update.

MARATHON TRAINING UPDATE

It’s about a 99% chance that I will not be doing a marathon in February considering the fact that I can’t manage a 3 mile run without intense pain at the moment.  I have a greater chance of knocking it down to a half marathon if I can get rid of the pain.  With my current diet and the base of running I’ve built, I feel fairly confident that I could manage a half marathon again even with my lack of training.  If I can’t fix my knee in time then I will not be running on Feb. 22nd.  I will continue going to my Chiropractor because heck, even if he can’t fix my running knee problem, your girl over here has some major back, knee, & feet issues.  I have scheduled an appointment with an Orthopedic Surgeon and hope to get some X-rays to make sure nothing is torn, but I’m leaning towards the bad news based on my run from yesterday.  I’ll give you another update after my Ortho appointment next Friday!

So after the terrible awful day I had… I finally had some things bring my spirits up and end the night on a good note.

1. My passport arrived in the mail!  I’ll be going to Jamaica at the end of February for a trip completely paid for by my office!  I’m taking my cousin with me and it’s going to be one big girls trip with snorkeling, scuba diving, workouts on the beach, laying out by the pool, swimming up to a bar for drinks, butler service, and eating way too much food!

2. I made some Engine 2 Diet approved cookies and they turned out great!  I also ate 5 of them last night while watching Friends and sitting by the fire.  I vowed to do absolutely nothing last night but relax!  It was well deserved and much needed.

3. Nick announced that Fast & Furious 7 will be coming out the day after my birthday (although I read somewhere it was April 3rd…) and that is being mixed into my birthday plans!!!!!!  I am obsessed with these movies and I’m SO THRILLED about it coming out near my birthday!  I can’t wait to see it, although I’ll miss the full on Paul Walker.  The funny part is.. I literally looked up the movie and saw April 3rd.  I was in the midst of texting Nick about it when he text me!  Clearly we’re big fans!

4. Although this didn’t happen last night, it happened yesterday and brightened my day.  Nick’s sister-in-law, Kathryn, asked if I could do lunch with her and baby Cade when they come visit in February.  Of course my answer was a big fat YES!  I just got excited to know that I’ll be seeing them in a few short weeks!

Ok, now I’m off to finish getting ready for work, I’ll be praying for a productive day on my way in with little to no stress or at least the ability to manage the stress well, and I hope each and every one of you have a great day as well!

  • What are your workout suggestions that do not involve high impact or running?  I can’t keep waiting on my run to start back! – I have Jamaica to get ready for.
  • What do you do when you need to unwind and relax? 

I find that eating & vegging out on the couch make me feel better.  Probably not the right answer haha.  Luckily this time it was with healthy cookies and not processed store bought cookies or chips!

I said no to Peanut Butter Cake!

Hey there!

How is your Tuesday morning shaping up?  I’ve already enjoyed a delicious breakfast and coffee, so I’d venture to say I’m doing pretty well, although I’m heading into work a little early this morning so it’s going to be a fairly long day!  I have my second Chiropractor appointment this morning and I’m hoping to get the a-okay to run again!  If I do, I’ll be screaming it from the roof tops so you should know pretty soon too!

Today is Day 2 of the Engine 2 Diet and so far so good!  Here’s a quick run down of my food from yesterday (Day 1):

Breakfast: Cinnamon Raisin Ezekial Bread + peanut butter + banana + cinnamon w/ a cup of coffee flavored with almond milk and cinnamon

Snack: Clementine + half a cucumber

Lunch: Whole Wheat crackers + peanut butter + a Lara Bar

Snack: Clementine + half a cucumber

Dinner: Whole Wheat Pasta with Tomato Sauce + Leafy Green Salad + Tangerine Vinaigrette dressing

Dessert: Kiwi

I decided to keep track of what all I turn down over the next month so I can realistically see what all I would have eaten and how many calories I would have taken in.  I’m sure it’ll be shocking once I add it all up at the end of the month.  I remember during the Health Starts Here challenge that I turned down A LOT of junk food mostly and I wish I had kept a journal of what I said no to so I could see the real impact a plant-based diet made in my life.  I know one thing… I turned down this beautiful peanut butter icing cake and opted for a kiwi.  If that’s not self-control then I have NO IDEA what is!

I am concerned that I’m not getting enough food.  Don’t get me wrong, I felt satisfied pretty much all day, but I also felt like I missed out on some important nutrients so I need to work on that.  I know last time I felt the same way until eventually I got the hang of it and it became relatively easy to get enough nutrients during the day.  It’s a learning process and takes a lot of effort, but it’s entirely worth it!  I’m excited to see how I feel at the end of the challenge – it’ll end about 2 weeks before my Marathon so I’ll be nice & healthy for it!

I definitely miss sugars the most, I have such a sweet tooth.

I’m really hoping the Chiropractor will help my knee pain and get me back to running.  I’m also hoping that I see such a drastic difference in my stride since I’ll be properly aligned.  It amazes me that I’ve been running with these issues for so long that surely this will be such a shocking improvement on my first run back!

Why say no to dairy?

Good Morning friends!  How was your weekend?  Do anything new & exciting or was it another typical weekend for the books?  Let me go ahead and apologize for the lack of pictures in today’s post!

Nick came to town this weekend and on Friday night he didn’t arrive until pretty late so we just hung out at my parents for a short while, watched some of the IT crowd (have you seen it?), and enjoyed the fire!  Saturday we were up way early to go watch the MS Blues Marathon.  Our timing was absolutely perfect to see Nick’s brother Trey during the race.  We arrived around mile 4-5 because we didn’t make it for the start and we waited around watching for only a few minutes, but then thought he had probably passed that point in the course, so we started walking back to our car to find the next station we wanted to wait at, as we were walking, we heard Nick’s name shouted out and it was Trey!  That was exciting, so we went back to the car and made our way to mile 9 hoping to see him at that point in the race.  We literally waited no more than 10 minutes before he came running by.  After that, we decided to grab some McDonald’s real quick (as someone who does care about her health, I don’t recommend McDonald’s – ever! But sometimes you crave a egg & cheese mcmuffin (minus the canadian bacon!))  We then ran into some traffic, so we didn’t make it back in time to see Trey finish the race, but we headed back to the race finish line to find him afterwards.  Then it was a freezing hour before we decided to head back to my parents for lunch.

Watching the race made me a little nervous for my marathon in February!

Saturday night we went over to Nick’s cousin’s house for a little get together since Trey was in town and it was nice to see some of his extended family that we haven’t seen in a really long time.

On Sunday I spent the morning cleaning my room, it needed it BAD!  Then I went and picked up Nick so we could go to Whole Foods for the week 1 meet-up.  I was planning on doing the challenge by myself, but mid-day Saturday, we had some time to watch Forks Over Knives and afterwards Nick mentioned that he may try to join the challenge with me so I brought him along to our weekly meeting.  This week was all about dairy & processed foods.

Processed foods are practically a no-brainer in my opinion.  We have all known that they are no good for us and it doesn’t take a rocket scientist to realize that potato chips & frozen foods are usually very unhealthy.

Dairy is always a topic that people struggle with when someone talks about going plant-based or going vegan.  It’s common for us to believe that we MUST get our calcium from milk and we MUST drink milk to have strong bones, but that couldn’t be farther from the truth!  Since the Health Starts Here Challenge, I’ve known that dairy wasn’t a requirement, but I feel like I’ve learned even more since August!  We do not actually get our calcium from the milk of a cow – we get our calcium from the plants the cow ate before being milked.  That right there tells you that you can get your calcium from a plant based source.  When you think about it, a cow produces her milk to feed & fuel a baby calf that will later grow into a 600 pound cow.  That’s what cow’s milk is intended to do, grow a calf, not a human being.  Another common misconception is that milk helps you lose weight, but that’s simply not true.  How could a type of milk intended to grow a 600 pound cow actually make you lose weight?  It was a marketing ploy from the very beginning.  I believe Mary Lindsey said that the milk industry has been sued THREE TIMES for making such a false statement which is why that marketing tactic is not used these days.  The study on dairy products simply amazes me and if you have the opportunity to watch Vegucated or Forks over Knives, please do yourself a favor and at the very least educate yourself!  Going vegan or plant-based will not be easy or something you’ll just immediately do, but at least have the facts straight, don’t listen to the industry leaders who are simply trying to market a product for sale.  I’m definitely not vegan or plant-based yet, I have my fair share of dairy, but I feel educated enough to know that one day I’d like to be off dairy completely and over the past 5 months I’ve drastically reduced my overall consumption of the product because I know the benefits of doing so.  Dairy has been linked to so many diseases that if we don’t at least cut back on our consumption, then we’re putting our bodies in great harm.  All I ask is that you do the research for yourself!

After the meeting, Nick, Rachel (my co-worker), and I all went for our “last meal” before the challenge starts – Japanese.  I really wanted some fried rice & veggies!  It was absolutely delicious & filling, but I’m excited about cutting out oils & eggs over the next 4 weeks.  Next it was time to grocery shop!  We went back to Whole Foods to pick up some food for the week and it was really fun helping them determine what they can have on the diet and finding items they were excited about using as opposed to alternatives.

This morning my breakfast was the same Cinnamon Raisin Ezekial bread with peanut butter & sliced bananas along with a sprinkle of cinnamon.  I have officially switched back to my almond milk for creamer in my coffee and it feels good.  Now I’m off to pack my lunch & snacks for the day and get ready for work!

If y’all ever have any questions about topics like that, please don’t hesitate to e-mail me or drop me some questions in the comment section!  I’m fascinated by this material and the disturbing fact that industry leaders have had so much control over our views & opinions on dairy, eggs, meat, and processed foods!  The change has to start somewhere and I’m so thankful for people like Rip who started the Engine 2 Diet and companies like Whole Foods who promote a Whole Foods plant-based diet with their Health Starts Here diet, also people like Marissa who create documentaries like Vegucated and the doctors behind the research who have taken the time to uncover the facts & encourage a plant-based diet in the treatment of their patients.  It is all a step in the right direction for healthier & happier living.
