Week(end) Recap!

Good Morning!

How did your weekend shape out?  Any St. Patty’s Day plans?  Mine turned out slightly uneventful for the majority of the weekend and eventful for a small part of the weekend.  Let’s back up just a bit to the tail end of last week though since I disappeared for most of that.

Last Wednesday, I attended Java Jog!  It’s been SO long since I was able to attend and can I just say… it was absolutely GLORIOUS!  My new shoes are doing great and my runs have been pain free, thank goodness!  It was so nice to be back with Mary Lindsey and Louise, we all agreed that it had been way too long without the three of us running together.  The first half of our run was excellent, I felt like we had a solid pace.  The second half of the run was slower for me.  My knee didn’t give me any pain, but it did feel odd at times, so I took it slow to make sure I didn’t do any harm and to be on the safe side.  Overall I was impressed with my run.  I also didn’t experience any residual pain throughout the day like I used to.

Of course, I always enjoy the free cup of coffee.

Mary Lindsey and I have been trying to get together for lunch, so we settled on Thursday at Whole Foods.  I’ve been trying to reel in some of my bad eating habits, so I was excited to find a black eyed pea and collard green soup that was Health Starts Here approved and looked delicious.  I knew I needed something with a little more substance to hold me over for the day though, so I grabbed some brown rice.  I dumped the soup over the rice and the most delicious meal was made!

Also, my beloved Kevita is on sale right now, 2 for $5 through the end of the month!

This weekend was pretty low key for me, but I really really enjoyed it.  Nick was planning to come home, but decided against it because he had a test running at work and wanted to be available for it.  That gave me time to catch up on stuff at home though, so it worked out well.  I did a lot of laundry/cleaning on Friday and Saturday morning.  I’m going through my closet right now to get rid of stuff I don’t wear.  I’ll have lots of bags for Good Will or the Palmer Home by the end of this week!

Saturday, I was invited to a fun St. Patrick’s Day party.  We drank, ate, and played games.  Of course, I arrived when they were playing Cards against Humanity.  Eventually we switched to Game of Things which was a lot of fun.  I had never heard of the game, but it’s basically like Cards against Humanity, but where you create your own lines, then you guess who said what and they get eliminated if you guess correctly.  We also played Bananagrams which is now one of my favorite games – I’ll be picking that up on my next trip to the store!  It’s similar to scrabble, but quicker.

I also met the CUTEST dog in the world.  His name is Albert, which is also the future name of my next dog.  He’s 10 years old and has no teeth, so his little tongue permanently sticks out of his mouth.

He’s a mini pomeranian and completely black, just like our sweet little Cappie.  He was a lot more friendly to strangers than Cappie is though.  I can’t wait to get my own dog and name him Albert.  I couldn’t help but say his name all through the night.

This weekend was also spent perfecting a delicious & healthy chocolate peanut butter oatmeal pancake that I can’t wait to share with you tomorrow!

Sunday was saved for blogging and catching up on e-mails.  I’d call it a successful weekend in the books – lots of productivity with a good mix of fun and friends!

  • What did you do this weekend?
  • Have you ever played the Game of Things or Bananagrams?
  • Seriously, have you seen anything cuter than a mini pom with his tongue sticking out?

My Dream Job

What I do: Currently I work for a Financial Advisor at an Insurance & Investment Company.  I absolutely love what I do and I could not be more blessed to work for the guy that I work for.  It’s a very detail oriented & tedious job, but it’s right up my alley.  I manage a lot of paperwork and client service requests along with any and every detail to running his business.  I have the best professional relationship I could ask for with my boss and I truly believe that the company I work for has the client’s best interest in mind.

Thankfully I have a great job and I love the people I work with/for, but I can’t help but imagine what my dream job would be. Don’t get me wrong, a stable 8-5 desk job isn’t terrible, but it’s a very sedentary lifestyle for someone who wants to be active and live a long life.   If I didn’t have this job or if something happened to it, what would I decide to do?

  • Blogger

Obviously being a full time blogger is most bloggers dream!  Who wouldn’t love a job where you can work when and where you want?  Who wouldn’t love a job where companies pay you to travel various places around the U.S.?  My favorite blogger is no secret, Julie @ Peanut Butter Fingers has the perfect blog job set-up in my opinion and I dream of having the same set-up one day.  She travels all around attending fitness expos and writing about health/wellness experiences!  She is a food ambassador for a few different companies and gets to tour their factories.  She also does stuff on the side like teach classes at her local gym.  If you’re a full time blogger, that gives you time for part-time jobs you’ll also enjoy as well plus time to volunteer!  One day, hopefully I’ll have my own Blog Travel page!

  • Travel Wellness Coach/Activist

What I wouldn’t give to have the opportunity to travel places for 4-6 weeks at a time and assist people with their health habits!  I have a lot of family that currently deal with health issues and I would love the chance to live with them for 4-6 weeks, transform their diet to a more plant-based diet and record (blog) the results  of their health’s improvement.  I could cook their healthy plant-based meals and go on daily walks with them.  I could eventually be so successful from blogging the results that others would hire me to travel to their location and cook healthy plant-based meals for them over the course of 4-6 weeks.

  • Whole Foods

Again, it’s no secret that I have a deep rooted love for Whole Foods!  I have 95% converted my grocery shopping to Whole Foods and I love just walking around and seeing what new products I can find.  They have the greatest vegan double chocolate cookies & they mark the products in the store that are Engine 2 Diet & Health Starts Here approved.  This is another company that I truly believe in what they stand for and want to be a part of the positive changes they’re making in the world.  I think I would enjoy a full-time job here, but would also find joy in a simple part-time job in addition to what I do on a daily basis just so I can be a part of this company.

  • Disney Marketing

IMG_0444

I didn’t have the greatest Disney College Program experience.  It wasn’t awful, but working my tail off and making minimum wage isn’t exactly my idea of a dream job.  I think if I had worked in a different role, I would have enjoyed it more.  Ideally, I would love to work in the marketing department at Disney.  Also, I wouldn’t want to work directly inside a park because I’d still like to enjoy myself on my days off by visiting the parks.

Do you ever think about what your dream job would be if you weren’t doing your current job?  Maybe your current job is your dream job!  Even if you love your job, like I do, you may have your heart set on something “different” and “unique” or maybe it’s the most normal job in the world, but you’d be happy doing it 24/7/365.

  • What is your current job?
  • If there were no limitations, what would be your dream job?

DIY Beginner Light Box

Good Morning!  Can’t believe we’re already a day away from the weekend.  This week has gone by pretty fast in my opinion.  I’m excited for the weekend because I just found out that Nick’s coming to town!  I thought we wouldn’t be seeing each other for another week (which would make 3 weeks straight), but I’ll get to see him tomorrow! YAY!  Other exciting events on the horizon – Lunch at Whole Foods with Kathryn and baby Cade plus happy hour after work with my friend Mary Lindsey!

Today I have a simple DIY, although it’s for beginner’s out there because I definitely finished with some flaws, but it’ll work out just fine as I’m starting out with “better pictures.”

I will gladly be the first to admit that I’m no photographer and my pictures are less than par.  On top of that, I don’t have any great windows in my house to take natural lighting photos either.  I decided to make my own DIY beginner Light Box to assist with getting better quality photos.  Like I said, this is most definitely for beginners –  There was nothing special about it and honestly, I would have probably done some things differently, but for this beginner – it’ll work just fine!

Supplies

  • 3-4 Foam Poster Boards
  • Hot Glue Gun

IMG_1390

I got my poster board from Michael’s for about $6.00.  I had a hot glue gun and glue sticks on hand already so this made for a simple & cheap DIY project!  I just applied the hot glue along the edges and then firmly pressed the boards together until it dried.

IMG_1406

I used an old Whole Foods bag for my glue gun and later used it for another DIY project I’m working on that involves paint.  These brown paper bags are perfect for craft projects!

There are few things I’d change or fix up based on my experience – 1) There are a few spots where the glue didn’t attach completely and I have small light holes in a few areas. 2) I probably wouldn’t have put up 3 walls, but just 2, which is why I said you could use 3-4 foam poster boards depending on your own preference of that. 3) I will probably add some white out or tape in the open light spots to continue it’s use until I’m ready to work a little harder on something better.  Since I’m fairly new with my desire to take quality food photographs, I wasn’t concerned with it being 100% perfect yet.  My suggestion for beginners is to do the best you can with what you have and then find ways to improve it for the time being, like I’ll be doing with the white out or white tape.

Overall, I’m pleased with the outcome because it was really quick and I used it immediately to take pictures of my Stuffed Bell Peppers.  I’m excited to see how my pictures improve and I may just buy another set of this $6.00 foam board to do the 2 sided light box to provide more flexibility as I take pictures & move things around, plus that will give me another opportunity to fix the light holes.

  • Do you use a light box?  Was it hand made or bought?
  • Do you have any suggestions of making a better light box that I didn’t think about?
