All About Food

Hello there!

I’ll be up front… I’m not really sure where this blog post is going today, so hang on to your britches because we’re about to fly by the seat of our pants!

The past few days I’ve been getting into oatmeal for breakfast.  It’s remarkably delicious with cinnamon and maple syrup.  Then I pair it with my favorite cinnamon orange hot tea and I’m in my comfort zone.  Since I haven’t had any banana’s lately, this has been my go-to breakfast the past week.

The other night I decided to try overnight oats.  I would love to create a good overnight oats recipe, and what I tried the other night turned out good, but not worth sharing on the blog yet.  I did 1 cup unsweetened vanilla almond milk with 1 cup oats, a dollop of peanut butter, and some cocoa powder.  The oats were a little thicker than I’d prefer, so I’ll definitely incorporate more liquid next time.  I’d like to also branch out with my flavors.  Honestly, the reason I use peanut butter and cocoa powder for almost everything is because I always have it on hand.  There are times when I think to do a new recipe, but I don’t have the first ingredients that stick out in my mind, but I know peanut butter and chocolate always make for a good combo!

Terrible picture, but one thing I love is the portability of overnight oats, which is why I really want to learn how to make a good batch.  I ran off to Java Jog yesterday morning with no time for breakfast, but I was able to pull this out of the fridge and have it ready to eat afterwards.  I even snagged a bite or two right before the run.

Since this post has clearly turned into a conversation about food, let me share my new favorite lunch because I’ve had it the past two days in a row.  It’s simple too.  I’ve been taking a can of no salt added pinto beans and buying a piece of jalepeno cornbread from Whole Foods, then mixing it together.  Pinto Beans & Cornbread was a childhood favorite and makes me nostalgic.  I decided to throw in some buffalo sauce that was left in our office kitchen and it was the perfect addition.

Now, tomorrow you can check back for a delicious recipe I tried out last night and we can call this post “All About Food” because literally.

    I’m awful at overnight oats too. I tried some in a crockpot one time too – disgusting. Waste of food.
