Weekend Re-Cap: Mother’s Day!

Wow, I hate it when I get behind, but it seems that everytime I go home to visit the family, I never even take a gander at blogging!  I still have countless of your posts to read, I’m sure, but I’m looking forward to getting caught up on life this week!  Nick took an internship in Jackson, so he won’t be in town distracting me! ๐Ÿ˜‰ I’m excited to read what all of you wonderful people did for Mother’s Day!   Now grab yourself some sweet iced tea or a cup of coffee and sit a spell as I share with you what I did this past weekend!
Friday night was Mississippi State graduation!  Nick’s sister, Collette, was graduating, so that’s where we were Friday night.  We decided last minute to head to Kroger and get her some beautiful flowers, but graduations are always so long, we didn’t mind missing the beginning!   We also got us some drinks from the store- Kathryn got Trey his drink, Samantha got her mom a drink, and I was just sitting there whistling my life away as I got myself a drink!  We arrive back to the coliseum for graduation when I realized that when we get back in there, Nick will be the ONLY.ONE. without a drink, so I felt pretty bad and I grabbed him a $3.00 Dr. Pepper from the concessions.  That night we went out with some friends of ours who also graduated and let me tell you, there was an older crowd enjoying our usual bar… it was entertaining!
Saturday, we woke up and tried this new coffee shop in Starkville called 929.  It was so interesting and there was this beautiful downstairs area that was very rustic!  We then went and looked at a house that Nick might be renting next semester and he seemed to really enjoy it!  After that, I helped him clean up some of his apartment since he was moving back to Jackson.
I headed home around 1pm so I could meet Ms. Paula for our swim lesson.  Since I’m training for this triathlon, she was going to help me finally learn the breast stroke!  People say that’s the ‘resting’ stroke, but that sucker is difficult!  I’ve been practicing though!  That evening I celebrated my best friends birthday!  We have been best friends since Kindergarten!  We went to Crazy Ninja, Hibachi, and it was delicious!  We then went to a bar off the reservoir.  It was a fun and relaxing night!

Sunday: Mother’s Day
I had a wonderful mother’s Day!  Woke up with the fam and went to church, after church we went to Kroger (which I love!) And picked up some fixings for grilling out.  I chose to have a vegan Boca burger because I figured it’d be healthier for my training.  We also did some yard work with my dad while he grilled.  After all the yard work and eating was over, I took a great nap and then woke up to get ready to train!  I met up with Nick’s sister-in-law, Kathryn, and we took a bike ride for 12 miles and then ran for about 2 miles.  It was a really great workout and I was super sore!

That night, I registered for my Disney Wine & Dine half-marathon! Yay! And then I also bought some supplies for my triathlon.  I needed a tri shirt and a water bottle cage for my bike, but I only needed a few extra bucks to get free shipping, so I went ahead and bought a water bottle for my cage and 3 packs of sports beans!  I can’t wait for all my goodies to arrive!  I then showered and got ready to go meet up with my sweet friend Patty who is in town right now!  She moved to Colorado and so she came back to visit for a wedding.  It was so wonderful seeing her!

I can’t believe this is happening! I’m committed now!
I arrived back in town yesterday and realized just how much house work I need to get done!  I got my grocery shopping done last night along with some prepping.  I made 2 juices, the first one wasn’t the greatest, but the one I had this morning was delicious and I was really looking forward to getting home and finishing the rest off!  I also made some snack balls and that recipe is coming soon!  Of course, I got it off Pinterest, but they’re delicious and I think I might be sending some along with the recipe to my foodie pen pal!  Tonight I’m making some healthy chicken salad for lunches this week and doing some much needed cleaning and laundry!

I don’t usually give such a long update, but this weekend was just exceptionally good, I was just in the mood to document it!  If you made it this far, happy Tuesday friends!

    Whoaaa! 12 mile bike rike and you still had energy to run 2 miles after?! You’re amazing. My butt would be sore as you know what after biking that long. lol

    Glad you had an awesome weekend! The chicken salad for lunches sounds yummy! How do you make it healthy?

    If you’re willing to eat a vegetarian (not vegan) burger, I highly recommend the “Griller’s Prime” by MorningStar Farms.
